Fried Sea Perch & vegetables. Delicate and light tempura fry with thin vegetables wrapping the fish giving more texture and slight sweetness; a highly technical dish I think . . . . . Most expensive side dishes (banchan/반찬) ever. Salmon roe, sesame oil, shiso blossoms. Hokkaido sea urchin marinated in fermented crab sauce. Gochujang Geoduck. Probably my favorite part of the meal given how thoughtful each individual component was; each dish also had contrasting textures.
