Turns out that Joyce Chen had a beef with Marco Polo. She was adamant that Italian spaghetti with meat sauce came from Chinese zha jiang mian. Of course, I had to try her 1962 “Peking meat sauce noodles” recipe in the Joyce Chen Cook Book. Details and my updated recipe are at VWK, accessible via my profile link.
