First try at dry aging beef appears to have been a success! This 18 pound prime beef ribeye lost 15% of its weight over a 50 day age. With the trimming we had to do, it took the total yield to just over 50% (for about $22 per pound). Worth it?? We’ll see when we cook these up!!
