As lovely it has been to be away back home and eat Polish food, I have to say we felt there were far too many courses over the long weekend. For us anyway. Our Polish family and friends though just kept putting them away. So tonight itâs a simple steak salad for dinner - just some peppery watercress, hot rocket and mild lettuce, sweet baby tomatoes, crunchy peppers, juicy cucumber and hot radishes. And a mountain of sliced #beefskirt simply seasoned with just salt and pepper - we like it rare to medium rare and piled high so that all those delicious juices dress the salad underneath the steak. Few crumbs of salty feta and a drizzle of balsamic glaze is all that is needed. I love this cut of beef and have been cooking with it for many many years, way before people like JO made it more popular - itâs one of my go to cuts whether Iâm after something cooked low and slow or high and speedy, it works well in many ways. As a steak, the key is to cook it quickly and on a high heat but allow plenty of resting time for a melt in the mouth morsels. Scrumptious and simple meal right here in #aniaskitchen .
