asian stir-fry with veggie chicken 🥦🥕
I wish I made more of this tonight! It wasn't the fastest meal to prep, but it was absolutely worth the time!
You wouldn't know from looking at it, but this is actually packed with spinach. I swear I used half of a large bag! I also used one of my favourite veggies: broccolini. I'm not a fan of cooked carrots, so I kept them raw and used a grater to get them small enough that they wouldn't overwhelm the dish with crunchy texture!
✓ bell pepper, sliced
✓ edamame, steamed
✓ carrots, grated
✓ fresh herbs, chopped
✓ peanuts, chopped
✓ juice of half a lime
✓ onion, diced
✓ garlic, minced
✓ fresh ginger, grated
✓ soy sauce
✓ stir fry sauce of your choosing
✓ olive oil
✓ veggie chicken • cook rice accordingly, adding fresh herbs, garlic & lime. Add a small amount of soy sauce and set aside.
• heat olive oil in a large frying pan. Add onion & cook 1-2 minutes until translucent. Add garlic & ginger & saute for another 2-3 minutes until fragrant. • Add veggie chicken, bell pepper, and broccolini. Cook for about 5 minutes. Add stir-fry sauce, spinach and edamame. Saute until spinach is wilted.
