Cooking for one doesn't have to be expensive, overwhelming, unhealthy or complex. If it all gets a little too hard, simplify it. My salmon, broccoli and kimchi dinner is jam packed full of nutrients, cost approx. $12 to make and only 10 minutes to cook. Don't get caught up in the 'it's too expensive to eat healthy' argument.
