CORN AND GOAT CHEESE FRITTERS WITH SWEET CHERRY TOMATO SALSA ๐ฝ๐๐

FOR THE FRITTERSโจOne large eggโจ3 tbspย garbanzo bean flourโจ2 tbsp milkโจ1/2 tsp ground cuminโจ1/4 tsp ground corianderโจ1/2 tsp saltโจ1/4 tsp fresh ground pepperโจKernels cut from 2 ears of cornโจ1 small bell pepper, seeded and dicedโจ1 jalapeno, diced (optional)โจ1/4 cup finely chopped cilantroโจ3 green onions, choppedโจ4 tbsp goat cheese, crumbledโจOil, for frying
FOR THE CHERRY + TOMATO SALSAโจ2 cups cherry tomatoes, halvedโจ1 cup fresh pitted cherries, halvedโจ2 tbsp fresh chopped chivesโจJuice from 1/2 a limeโจsalt + pepper, to taste
1. Preheat oven to 350 F and line a large baking sheet with parchment paper.โจ
2. In a large bowl combine the corn kernels, diced jalapeno, bell pepper, cilantro and green onion. Set aside.โจ
3. In a separate larger bowl, whisk the egg and add the garbanzo bean flour, milk, ground cumin, ground coriander, s+p. Continue to whisk until fully combined. Add the crumbled goat cheese and corn mixture and gently stir to combine.โจ
4. In a large skillet heat 2-3 tbsp of olive over med heat. Add a spoonful of batter (approx 2 tbsp) to the skillet and fry until brown and crisp, approx 2-3 min per side (I was able to fit 3 fritters in my skillet per round. Do not crowd the pan!) 5. Transfer each batch of cooked fritters to a surface lined with paper towels and allow them to drain before transferring to lined baking sheet to keep warm in the oven.โจ
6. Repeat until all the batter is gone.โจ
7. As the fritters are cooking, prepare the cherry and tomato salsa- in a large bowl, toss the halved tomatoes and cherries with fresh lime juice, chopped chives, salt and pepper.
8. Serve fritters with a large scoop of prepared cherry and tomato salsa and chopped avocado, if desired.
