I love Easter weekend! Being with family is what makes my heart the happiest of all. Whenever we have these opportunities, we usually have a feast of some sort! My yummy #cilantroranchpastasalad is so perfect for this weekend. It's a light, refreshing, cold pasta salad and you can adjust it to your liking! I dare you to make it๐! Cilantro Ranch Pasta Salad
1 Pound of pasta (Gemelli is my favorite)
1 English cucumber
8 Ounces cherry tomatoes
1/2 Red onion
Bacon crumbles (as desired)
16 ounces Cilantro Ranch Dressing
Boil noodles until Al Dente, drain and rinse in cold water.
While noodles are boiling, slice and quarter cucumbers, cube avocado, half cherry tomatoes, dice onion, fry and crumble 4 slices of bacon (or just use packaged crumbles). Stir in the Cilantro Ranch dressing into pasta and then add in toppings and toss together.
Add in any extras as you desire!
Cilantro Ranch Dressing
1 cup Mayo
1 jar of Green Salsa
1 packet of Dry Ranch Dip mix
1 bunch of cilantro
squeeze of lime
Add all ingredients into blender and blend until smooth.
