Its a rainy 🌧 day here on this #memorialday weekend so I whipped 🌪 up a batch of my #organic Italian style Tuscan soup 🥣 Its packed 💥with veggies 🙌🏻🙌🏻 such as local braising greens from @goransonfarm 🌿, Napa cabbage, #nongmo corn 🌽, mushrooms 🍄, green beans, zucchini, red pepper 🌶, #local #pastureraised Italian sage sausage from @riversidebutcher , a little brown rice and kidney beans all in a tomato 🍅 based #bonebroth then topped with local #lactofermented dill pickle sauerkraut ✨✨. This meal certainly reminds me of my mom. ❤️ She makes it all the time and it’s incredibly easy, delicious, and full of veggies! Last time I was in Indiana I requested it over and over. Plus, most of the ingredients can start off frozen (like mine were) and it literally took me about 10 minutes to prepare. • Cauliflower “Fried Rice” 🍚 -frozen cauliflower rice (I often buy it fresh then throw it in the freezer when I get home) -frozen mixed veg (peas, corn, carrots, green beans) -broccoli/carrot slaw (optional, I buy it pre-chopped at Whole Foods) -2 eggs (@vitalfarms) -2 slices sugar-free turkey bacon (@wellshire) -low sodium tamari (soy sauce or liquid aminos also work) Directions: Simply throw all your frozen veggies in a skillet with a little avocado oil to thaw, then add any fresh veggies you want to add and keep cooking. Fry a few pieces of bacon on the side, then chop them into small pieces. Once the veggies are cooked, scrape them to the side of the skillet and add two eggs to quickly scramble then blend everything together. Sprinkle as much tamari on it as you’d like (I usually start off slow and taste test as I go). Remove to a serving bowl and add avocado on top. 🥑😋 #sabrinafitnessandnutrition #keepitsimple

Every bite is an adventure. 🎒🗺 . A twist of cracked pepper opens an aromatic world of botanical and political histories. 🌿 Sampling a recipe from somewhere you’ve dreamed of going can give you the sense of traveling there. 🍱 And with a historical recipe, you can come close to really traveling through time. ⏱ . Reading about the travels of Marco Polo, medieval Berber scholar Ibn Battuta, or the contemporary bold adventurous gourmand @anthonybourdain can either satisfy or amplify the itch for adventure. Usually it’s the latter, for me. 🔮🗝🗺⚡️ . I photographed this book, which evidently belonged to one “Lou Frank”) in the library of Icelandic Culinary Historian @nannavalgerdur. Nanna shared tales that still linger in my memory today, and this cover evoked the bold journeymanship of my own Icelandic adventure. I’m truly grateful to be a culinary scholar and woman in 2018. . Another book by the same author, Charles H. Baker Jr., was called “The Gentleman’s Companion: Around the World with Jigger, Beaker, and Flask”. He spent much of his life traveling and chronicling food and drink for @esquire @townandcountrymag and more. {PAYING ATTENTION ON PURPOSE} // 👈🏼 That, my friends, is Mindfulness in a nutshell. That’s it. No fancy mantras, yoga poses, or seated meditation practice required. Sure, we’re paying attention all day to everything happening around us- to our coworkers and our loved ones, to the tasks at hand, to all of the stimuli that make up (and distract us from!) our busy lives. But- how much of this attention-paying is habitual, reactive or unconscious, and how often are we deciding to slow down, and deliberately choose where our attention goes? • What I like about Mindfulness (ok, one of the many things) is that it’s like your a la carte, take on-the-go meditation practice because you can do it literally anywhere, and at any time. When we practice Mindfulness, we’re just observing what we’re experiencing through our senses, or watching the thoughts and feelings passing through our minds with curiosity. We aren’t reacting to any of this information, and we are working to not judge it, either. Part of Mindfulness is also noticing how adorably human we are, and how quickly our mind wanders off to attend to things other than the the present moment. A wandering mind isn’t a sign of being “bad” at Mindfulness, a wandering mind is a fabulous opportunity to practice strengthening the “noticing” muscle. • Here are a few ways you can practice Paying Attention on Purpose: ➰ Putting your phone down while you’re eating alone, and noticing what your food looks like, tastes like, smells like. ➰ Noticing when you’re full. ➰ Taking a deep breath, and following the complete inhale and exhale. ➰ Mentally scanning your body from head to toe, and noting what you are aware of. ➰ Pick one sound, and see how long you can stay with the sound. ➰ Notice what’s floating through your mind right now. A memory? A worry? A feeling? Put a little name tag on it, and let it drift by. ➰ Or…? How do you practice Paying Attention?

First time standing over my food outside in my pajama shorts and taking 💯 pictures of it before eating so that I could share it with all of you cause I knowwww you’re dying to see what I ate for lunch today. How did I do?! I have to do this project for class where I input my meals to see actually how balanced they are in terms of the macronutrients (protein, fat, and carbs) and BOY have I learned a lot. I am 0 for 2. Each individual’s ideal fat, protein, and carbohydrate intake will vary based on activity levels, goals, digestive health, age, etc., but as a basic starting point, aim for 30% of calories from protein, 30% from fat, and 40% from carbs. So this meal? Lacking protein. And it’s 75% fat! Who knew Although I could make up that protein in another meal today, a good early practice is to start paying attention, and start balancing your meals as much as possible. You’ll get so much further. Work with an NTP to determine exactly what your macro balance should be, without guessing. (Soon that will be me and I will force you to be my client)

Is it just me or did today fly by extra fast?!! How is it already 4pm? What did I even do today? 😂 ok but in all seriousness I’m just having lunch now and it’s delicious! Lots of greens with raw purple asparagus, rainbow carrots, cucumber, cherry tomatoes, and smoked paprika shrimp with hemp hearts and pumpkin seeds. Dressing is my usually go-to - fresh lemon juice, olive oil, salt and pepper. Next time, I’m adding a bit of Dijon! GOLDEN MILK BANANA BAKED OATS 😍🧡🍌. I had a leisurely morning with this cooler, cloudy weather ☁️ we’ve been having and baked oats popped into my head 💭.. and it sounded 👌🏼. Actually, it was @cleaneatsbytay baked oats that came to mind 🤔... and, not having made baked oats before, I looked up a few of her posts and came up with THIS version! 🙋🏽‍♀️. I followed her simple recipe and used golden milk spices (turmeric, black pepper, cardamom) with a mashed banana 🍌, and threw in some coconut yogurt 🥥 to make it a little extra creamy. This came out so delicious! 😋.. it may become a breakfast staple 🙌🏼. Hope everyone is enjoying the beginning of this extra long weekend! I’m dog sitting/housesitting for the next few weeks and am soaking up the doggie time 🐶 (dog lover 🙋🏽‍♀️).. along with soaking up the amazing open kitchen I get to play in during the next few weeks 🤗🤸🏽‍♀️🙌🏼. ..follow along on my stories to see how I made these delicious baked oats! . . It's the weekend and a warm one too which means refresher season is here! This Pomegranate Mock Mojito is a straight shot of joy juice to the brain. What you need: 1/2 cup freshly squeezed lime juice 1/2 cup pomegranate juice 2 teaspoons honey, optional 24 sprigs spearmint or peppermint 1 cup seltzer water Ice Put the lime juice, pomegranate juice, and honey into a large measuring cup and stir to combine. Add the mint leaves and crush with a wooden spoon against the side of the cup. Add the mineral water and stir. Pour into two glasses filled with ice and serve immediately. Have a lovely weekend✨

I don't often eat breakfast - I'm trying out the whole intermittent fasting thing. But yesterday was my birthday so I took the day off work and treated myself to these Grain-Free Chocolate Chip Mini Pancakes (page 104 of the #plantparadoxcookbook). I made the following modifications: -subbed vanilla extract for the almond extract -swapped out half the water with full fat unsweetened coconut milk -opted for no sweetener These were amazing! Even without sweetener. I topped them with grass-fed butter which added a savory element. The recipe yield was huge! Twice as many pancakes as shown on the plate. I'm going to have pancakes for days!!! It will be quite a challenge to go back to the fasting.

I’m always looking for new, healthy meals to make on my quest to eating better (and trying new things, but I’m struggling with that 🙊). With the help of @RaosHomemade, Shaun and I were able to make a delicious (if we do say so ourselves) Chicken Parmesan!⠀ ⠀ To make it healthier, we used whole grain spaghetti noodles for the bottom layer. Then we topped it with chicken tenderloins that were coated in a breadcrumb and Parmesan cheese mixture and cooked in an air fryer. For the cherry on top, we used Rao’s Homemade Marinara Sauce and mozzarella cheese. On a side note, Woke up this morning to my delivery of groceries from @milkandeggscom ~ literally four bags of food with things like bitter melon, daikon, raw milk (!!), watermelon radish, and pineapple 🍍 Not a bad way to start off the weekend 💃🏼 I’ll definitely be creating tons of new recipes this weekend... stay tuned!! 😋

May has been nuts, and this was the first time I’ve cooked myself something to eat in this kitchen (I’ve been packing some lunches and @devlinmoore has been an angel and has been making dinner ALL week). the kitchen is slowly but surely getting unpacked (as is the rest of the apartment), and I’m getting used to 90% less of the counter and cabinet space. headed to Home Depot & ikea soon for some more storage options, but for now here are the deets for my keto lunch . . two pasture raised eggs, avocado, @organicgirl romaine/spinach/arugula, olives, @primalkitchenfoods avocado oil ranch, and LAMB BACON from @fattedcalf. . . I know I talked about this in a story but for those who missed it - Devlin & I are experimenting with keto (ya know, a super high fat/low carb way of eating). Devlin actually decided he wanted to do it, and since he has been so so accommodating throughout all of the different ways of eating IVE wanted to try throughout the years, I figured why not do this with him. For anyone who has eaten keto - we are really just struggling with getting fat without a lot of protein. staying away from carbs has been surprisingly easy, and I’m already seeing some improvements in my energy and digestion. happy Saturday - I for one am so grateful for this extra day off. #mdw #keto

POST RUN SMOODIE🏃🏼‍♀️🥤especially needed for this intense heat in Texas☀️! Learning to love days spent by myself doing things I love. SMOOTHIE = handful of organic Tuscan kale 1/2 cup of organic wild blueberries 7 pieces of organic coconut meat (Trader Joe’s) 1 spoonful of coconut oil 1 spoonful of @sunbutter 1/4 of a frozen banana 1/2 teaspoon of chia seeds All brought together with my homemade hemp milk (less milk = more thick of a smoothie) Topped with @purely_elizabeth original granola (My favorite reusable straws are linked on my amazon bag & you can get my nut milk bag from the link in my bio too @elliesbest)

speeding through a little mid hike pilates + a cameo from hugo’s cute doggo butt! i try to get my movement fix every day, even on vacations. pilates is what keeps my body feeling good, and a back issue is the last thing i need on a weekend away. don’t worry, i balance all this healthy behavior out with plenty of rosé afterwards...i do travel with a french man, you know. if you don’t mind getting a little dirty, quadruped/birddog reaches in hiking boots are basically ankle weights! 🔥

total pancake recipe fail over here but nothing a fat drizzle of nut butter can’t fix, right? anyways i tried to make some vegan chocolate buckwheat pancakes buuut they kept falling apart in the middle while cooking and the outsides kept burning. i started getting super upset while cooking them bc i was so excited to share the recipe on here and they just didn’t work out🤷🏼‍♀️they still tasted amazing but the recipe deff needs some tweaking. it can be hard when things you try in the kitchen don’t work out but don’t let that get you down from experimenting and broadening your horizons with food and cooking. i could barely make pasta 2 years ago and now here i am!! i will be working on this recipe but in the meantime i will tell you it involved banana, zucchini, @bobsredmill buckwheat flour, @califiafarms almond milk, @philosophielove cacao magic, & @lilys_sweets_chocolate choc chips!!! major shoutout to the toppings for saving this disaster of a brunch tho➡️nana slices, all the berries, @onedegreeorganics sprouted cacao granola, & @traderjoes mixed nut butter. HAPPY SATURDAYYY😊❤️

Great..another picture of a salad on instagram🙄 . Yeahhh, you’re right about that, BUT this salad has SO much meaning to me. Let me explain... . This was dinner last night. My body was craving fresh ingredients. A big bowl of greens, covered in cado and filled with so many beautiful colors🌈 For the first time in over a YEAR, I ate a salad. . Since being diagnosed with SIBO, I stopped eating salads because I was told they were too tough on my digestive system. . So, I did what my doctors told me and cut out salads for over a year. Everything I consumed was cooked. Yup..nothing raw. . Yet this whole time my body craved these foods. Especially when I was living in Hawaii, all I wanted was fresh produce. . But, my gut was a mess so I did as I was told. . Fast forward to today. I have been educating myself on @medicalmedium protocols and taking baby steps over the past month to reintroduce foods that my body has been asking for. . Last night this salad was phenomenal. Yes my stomach made all sorts of funky noises for the next few hours, but it didn’t hurt-and that’s a huge victory for me! . So while this is just another salad to you, it’s a big step in my healing journey. . I share this photo for all of you who have messaged me feeling so scared to reintroduce foods like this. . I get it. . It’s just as tough mentally as it can be physically. . We have conditioned ourselves to fear so many foods because of how bad we have once felt. I am still working on this too. . So while everyone else on social media shares progress pictures of themselves at the gym, I share this salad as my progress picture of me healing from the inside out 🥗
