This is an easy, versatile recipe that I made up. You can replace the prawn
s with chicken, duck or even vegan burger patties sliced up if you wanted to.
Cook couscous according to instructions on the packet. I prefer using vegetable stock to water, as I think it gives it more flavour.
In a large frying pan:
• 1 - 2 TBS of extra virgin Olive Oil
• Gently fry a chopped red onion until soft (a few minutes)
• Add chopped capsicum (I used a yellow one)
• 2 tsp garlic paste (or crushed fresh garlic)
• 1 tsp lemon grass paste (optional)
Cook together for a while to infuse the flavours.
• Mix through the cooked couscous for a few minutes
• Add salt and pepper to taste 🧂
• Add cherry tomatoes or chopped whole tomatoes 🍅 and about 3 - 4 cups of baby spinach.
• Cook for a few minutes until spinach is wilted.
Transfer the whole mixture to a large bowl 🍲
Then fry your prawns, chicken, vegan patties or whatever protein you want to add.
For my prawns 🍤 • I defrost them naturally or pour boiling water over them.
• I drain them in a colander and pat them dry before frying.
To fry prawns 🍤 • Heat the oil and garlic
• Cook the prawns for a few minutes
Add to the couscous mixture and squeeze fresh lemon for extra flavour 🍋
