Lunch is being provided for me at work today, so I’m prepping for that by starting my day off with a 0pt breakfast and packing 0pt snacks. Gotta take care of what I can control! For breakfast - That’s an omelette with peppers and spinach. I’ve really been loving this mini-crockpot! I have it at work and it simply reheats food. I try and avoid reheating in the microwave as much as possible so this fills that void nicely! All I do is plop in the bowl as soon as I get to work in the morning and it’s ready for me to eat by lunchtime! So easy and the food tastes much better. Great for soups, chili and the like. I’ve got in there some sautéed peppers and onions topped with buffalo shredded chicken. How are you planning to navigate through Thanksgiving this week? I’m hosting for 14 people. I started food prepping last night and will be prepping everyday to prepare for Thanksgiving. Lots of cooking and lots of exposure to yummy foods. My plan? 1. Start out everyday with 30 minutes on the elliptical. 2. Drink lots of water! 3. Go for 0pt snacks when I can - oranges, apples, bananas, Greek yogurt & strawberries, HB eggs. 4. Don’t stress about not being perfect diet wise this week and enjoy time with my family. Chicken pot pie - yum! 10 pts/serving (1/8 of the pie). Recipe below! #well nessthatworks #mealpreplife #weeklymenu #toddlerapprovedfood #weightwatchers #weightwatchersfreestyle #kristypreps Ingredients: 2 Store bought pie crusts - I got a pilsbury 2 pack 3 cups shredded chicken 2 medium potatoes (peeled and diced) 1 medium onion - diced 3 celery ribs - diced 1/4 fresh parsley - chopped Bag of frozen mixed veggies (I used a bag with peas, corn, carrots and green beans) 4 cups chicken broth 1 cup milk 1/4 cup cornstarch 3 cloves of garlic, minced 1 egg Salt & pepper to taste Preheat oven to 425. To make the filling: Over medium-high heat, drizzle olive oil. Sautéed the onion & parsley for 2-3 minutes until translucent. Add in potatoes & celery & cook for another 3-5 minutes. Then add in frozen veggies & shredded chicken, along with 2 cups of the broth. Bring to a boil and simmer for 10 minutes. While that is simmering, add cornstarch & remaining 2 cups of chicken broth into small bowl & stir until cornstarch is dissolved. Add in chicken broth & cornstarch mixture into pan & stir. Add in minced garlic, salt & pepper to taste and 1 cup milk. Bring back to a simmer & cook for 10 minutes. Once the filling is made - roll out the crust using a rolling pin until it is big enough to fit in cast iron skillet. Place bottom crust in skillet and dump filling in. Top with 2nd crust. Cut 4 slots in & brush with egg wash. Cook for 30 minutes in oven. Смотреть полностью

Not a great pic but I was too hungry to keep trying to snap a better pic 🤷‍♀️🤷‍♀️🤷‍♀️ 7pt dinner 2 slices fit & active wheat bread - 2 pts Tuna Salad - Tbs light mayo, celery seed, salt & pepper - 1 pt Tomato slices - 0 pt Cheddar cheese slices - 2 pts Honey Dijon vinaigrette- 2 pts I spread the tuna on side of the bread, on the other side I put sliced tomatoes and topped with the cheese. Put onto a baking sheet and into the oven until cheese melted 8-10 minutes. Drizzle the vinaigrette & serve! Shoutout to the wifey @erin_for_real since she did the cooking and recipe creation for dinner tonight! 😘😘😘 . . . Chicken: nothing fancy - chicken cutlets dredged in flour first, then egg, then in a panko mixture of panko, Parmesan cheese, s & p. Baked at 450 until cooked through - about 30-40 minutes, depending on the thickness of the chicken. . . . Cabbage & carrot medley - basically we had half a head of cabbage that we needed to use - shredded that. We also added shredded carrots, 3 cloves of minced garlic and diced up an entire onion. In a large skillet, used cooking spray and 1/2 Tbs of butter - added all ingredients to the pan at once. Added in salt & pepper and ~1/2 cup of chicken stock. Cooked it down for about 30 minutes, while the chicken was baking. . . . Guesstimating that dinner is 5 pts total (panko, butter, Parmesan cheese). 30 minutes. I pushed myself to exert 30 minutes of effort at 10:30 tonight so that I could be successful tomorrow. I didn’t want to do it, but I didn’t want to set myself up for failure even more. I spent 30 minutes tonight and was able to make my breakfast, lunch and snacks for work tomorrow AND make a salad and slice strawberries for my wife & daughter to have tomorrow. Win/win/win. Mix above ingredients together & add in any veggies you like. I added in bell peppers, red onions & spinach. Mix all together. Pour into greased pie dish.
