Well I missed National Tequila Day. So here's a belated post. We were going camping with our new dual-sport club a few years back, and heard it was one of the clubs member’s birthdays. Instead of baking a cake, I decided to make these margarita shooters the day prior so that we could celebrate with Jell-O shots! These came out so good and everyone enjoyed them. Yields: 24-30 Strawberry Margarita Jell-O Shooters Ingredients: 1 box (3.9oz.) Strawberry (real, not generic) Jell-O 3 green baskets of fresh strawberries from the farm (about 24-30 strawberries) 8 ounces tequila, preferably reposado or blanco (1 cup) 6 ounce Cointreau (3/4 cup) Kosher Salt for garnish 1 lime, cut into small triangles and cut a slit to fit onto side of strawberry Strawberry Preparation: Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom. Use a huller or apple corer to empty out the strawberry. Once the strawberries have been emptied, use a towel to pat the outside of the strawberries dry. Check each strawberry and make sure there is not a hole in the bottom before you start filling. Jell-O Instructions: Boil one cup of hot water in a saucepan, then add in Jell-O powder and whisk until powder is completely dissolved, about 2 minutes. Set aside. Measure out 1/4 cup of cold water and set aside. Combine tequila and Cointreau, in cocktail shaker filled with ice. Add liquor mixture to cold water and stir to combine. Then add cold liqueur mixture to hot Jell-O mixture and stir to combine. Pour final Jell-O mix into strawberries and chill overnight. Fill your strawberries as high as possible, as the Jell-O will sink a bit in the middle. These are best made the night before and served the next day. Dip your finger in water or use a moistened brush to wet the edge of the strawberries, dip and rotate the strawberries in salt to rim. For all the Momma's and daddy's looking to make homemade stews for your infants/toddlers, it's really simple. Each week I use a different poultry, carb, and veggie. No seasonings necessary. Boil until soft, blend with enough of the boiled water to get the thickness you want. Chicken, steak, pork, ground beef, ground turkey. Yams, sweet potato, russet potato, Yukon gold, tomato. Peas, Brussel sprouts, broccoli, string beans, garlic, onion, squash. Nicolas has liked every combination so far. We've still not made one with pork. This was a meatball style soup. I've been craving halibut for some time now. After a quick trip to Costco with Madie last weekend, we decided to grill the fresh Atlantic halibut we picked up spur of the moment. Yes it was pricey but we already had all the ingredients so it was really a dinner for 3 for less than $30. Found this recipe on HEB and altered it a bit. Pat halibut with paper towel. Sprinkle with salt and pepper. Spray a large piece of foil with cooking spray and grill the halibut on the foil. BBQ until internal temp is around 135. In a large pan sauté garlic, lemon juice, lemon zest, capers, white wine, and 2 tbsp of butter. Once it's at a boil, add in a pinch of dill and remove from heat. Only flipped fish once. Enjoy halibut with French fries or over white rice. Spoon the lemon caper sauce over the fish. Friendly reminder that Father's Day is this Sunday. I had Madie draw in the card for her Dad, printed some photos, ordered an assortment of highly rated cigars, got him a 1956 issue of Cycle magazine, and homemade his favorite salsa. All a work in progress over the last couple months. For my dad I sent a special gift and card since he's in Ohio. Sometimes it's hard to get creative when we are so busy. I think a simple card is plenty but when you have a husband that does so much for his family, especially when I travel so much for work. It's important for me to show him how much he means to our family. Truly blessed. One hour meal prep for our family of 4. While Nico was down for a 5:30pm power nap and Madie was outside helping her dad install headlights on the T100 before sun went down, I was able to prepare puréed pears, puréed stew (chicken, Brussel sprouts, mushrooms, orange bell pepper, and Yukon gold potatoes), puréed butternut squash, garlic chicken, sautéed mushrooms, and roasted crispy wedge potatoes. Dinner is served! And lots of leftovers. And somebody wanted to help. "Help" meaning try all of Nico's food before he does. Tostada is a Spanish word meaning "toasted". In Mexico and other parts of Latin America, it is the name of various local dishes which are toasted or use a toasted ingredient as the main base of their preparation. My mom used to make tostadas a lot when we were kids. I probably haven't had one in 20+ years. But I remember really enjoying them. This week I made Nicolas a ground turkey stew so I decided to use the leftover ground turkey to make taco meat. Also had some older corn tortillas that were expiring soon so I had the idea to make tostadas with organic refried beans, white rice, lettuce, ground turkey meat with a little taco seasoning, avocado, and tomatillo salsa. Fried the tortillas until crispy in olive oil. Pat oil off on paper towels. 20 years ago I graduated high school. Wow!Originally Class of 98 and after zero period classes, summer school, work experience and a 4.0 GPA, I was able to graduate a year early. Class of 97! I was 16 and knew if I took summer off, I would postpone college. I decided to try Chaffey Community College and continued to work two jobs. My first semester was the summer session. The school offered a lot and it's a nice campus. I recently received a mailer by snail mail from Chaffey. They now have a program that offers free tuition to 10th and 11th graders. You will only pay for the textbooks and fees. Not quite sure what the "fees" are. I always bought used books. Good morning Friends! Hope everyone is off to a nice weekend. Now that Nico is 6 months he's been cleared by the doctor to go from 100% mommy's milk to mommy's milk and puréed foods. With Madie's doctor they suggested a different veggie every week and then add in meat later. Nicolas's doctor is the complete opposite. Go for the meat right away he says! Make him stews. So the first week I did it with chicken and this weekend I've prepped a steak stew. I leave on business to SC tomorrow so I'm trying to make sure he has a few options to hold him over until I get back. He loves the stew. I heated up in a pot of boiling water: steak, broccoli, onion, potatoes, and carrots until soft enough to run all of it through the NutriBullet. Add the meat and veggies and slowly add in the water until puréed enough. He's a fan, and that's all that matters. Madie never had store bought baby food. It will be my goal with him as well. Taking a 6 month old and a near 3 year old camping for the weekend is no joke. While continuing to do your normal tasks as a mom: feeding, changing diapers, helping your daughter on and off the toilet, pumping and making meals...you now do it in a very confined space. Our days of just the two of us riding our dirt bikes all day, enjoying a cold beer after our ride, and sitting by the fire pit all night have come to a red light. It's now been replaced by our kids who need our undivided attention. It's time to train them to ride dirt bikes so we can ride together as a family one day. This morning I took the slightly burned ham and egg croissant and while holding Nico I set it down so I could sit outside on a folding chair. Madie walks over and says "Happy Mother's Day" while dumping a shovel full of dirt on my breakfast. I wanted to laugh, I wanted to cry. But instead got up, walked inside, and heated up another croissant, minus the egg and ham. Now driving home from our camping weekend and our kids sound asleep, I am reminded that others are having far worse days than dirt dumped on their breakfast. I want to wish everyone a wonderful Mother's Day but I also want to wish a good day to everyone who has lost their Mom, everyone who can never be a mom, and also to those that are pregnant and will soon be a mom. A MUST try Crock Pot recipe. I've said it many times. We made it yesterday morning. Started before school so it could cook on low for 10+ hours. It takes about 14 minutes to prep or less. Thank you to Ashli McClary who shared this with me years back. I've probably made it 20 times by now. It tastes even better days later. Still having trouble finding the Original Archer Farms sauce so we tried this Hatch Valley 505 and loved it! Some of these are old photos but I wanted to give you an idea of how delicious it looks. So many pot roast recipes out there but I have to admit we are huge fans of this one. Easy, fast clean up and delicious! You can prep this in 20 minutes. We threw in a cup of baby carrots, chopped up one Russet potatoes, and 1/4 cup of yellow onion. 🎈🎤🎈🍼 (Madie typed those). We use a half packet of the dry onion soup mix. Slow cook for 10 hours or use her recipe below. Madie thought her half eaten apple needed to go in it. We removed it before cooking. A must try! Marie's Easy Slow Cooker Pot Roast Prep 40 m Cook 9 h Ready In 9 h 40 m Recipe By:Marie Thomas "Moist and juicy pot roast done in a slow cooker with carrots, onion and potatoes." Ingredients 4 pounds chuck roast salt and pepper to taste 1 packet dry onion soup mix 1 cup water 3 carrots, chopped 1 onion, chopped 3 potatoes, peeled and cubed 1 stalk celery, chopped Directions Season the roast with salt and pepper to taste. Brown on all sides in a large skillet over high heat, about 4 minutes per side. Place the roast in the slow cooker and add the soup mix, water, carrots, onion, potatoes, and celery. I'm at a business conference in Boston and every year it takes place around late March. I always ask one of the buyers what he gave up this year for Lent. One year he gave up alcohol. He never did that again. Well this time I really liked his answer. Instead of giving something up, he wants to do positive acts of kindness. He mentioned not wanting to make it about buying things for others, but more about gestures. He asked some of my ideas. I had some on the spot but after putting some extra thought into it, I came up with a few more. Please share additional ones you may have; as this is something we don't do often enough. Been traveling all day. Beyond ready to get to my hotel. I did realize that Easter is just around the corner. Probably a good time to start picking up a few things when you see them. Especially at the Dollar Stores before it's all gone. I will post some ideas for the kiddos in the coming days but this has always been a favorite post. Taking care of the adults for Easter. One of my all time favorite crock pot recipes. It takes about 10 minutes to prep. The most simple ingredients and only 6 slow cooking hours. It doesn't look the most appetizing but you'll get the moistest chicken and delicious meal. The 3 of us enjoyed it plus leftovers for the 3 of us. Crock Pot Chicken Parmesan Ingredients: 4 boneless, skinless chicken breast halves 1 cup Italian Seasoned Bread Crumbs 1/2 cup Parmesan Cheese 1/4 tsp black pepper 1/4 tsp kosher salt 1 TBSP olive oil 2 eggs, beaten Sliced or shredded mozzarella cheese Favorite jarred normal sized marinara sauce – We use Culinary Circle brand from Albertson’s Directions: Spread 1 TBSP of olive oil into the bottom of your crockpot stoneware insert. Cut chicken into halves and sprinkle with salt and pepper. Beat the eggs with a fork in a separate bowl. Mix the bread crumbs with the Parmesan cheese in another separate dish. Dip the chicken into the eggs, then into the bread crumb mixture, coating both sides with crumbs and cheese. Place the chicken breast pieces in the bottom of the crockpot. Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like. Cover chicken and cheese with entire jar of marinara sauce. Close lid and cook on low for 6-7 hours or high for 3-4. Little boy-boy is 4.5 months old. We got the okay to start him on oatmeal cereal mixed with BM 1-2 times per day. The doc prefers he start on solid puréed foods closer to 6 months so he keeps getting BM as the #1 source of food. Madie seems to like feeding her little brother. Makes me smile. James and I are trying to put in a whole house attic fan to help save running the AC all summer long. Doing this between playtime, pumping, feedings, and naps. It will get done. I can't tell you how long I've wanted to make Prosciutto wrapped asparagus. Years! I honestly didn't know what was used to make it besides the meat and veggie. The secret ingredient: Neufchâtel Cheese (1/3 less fat than regular cream cheese). So if you don't have Neufchâtel, then just use good ole cream cheese. It was delicious. I've also been eating it cold days later. Perfect snack. Preheat oven to 450 degrees F (230 degrees C). Spread prosciutto slices with Neufchatel cheese. Wrap slices around 2 or 3 asparagus spears. Arrange wrapped spears in a single layer on a medium baking sheet. Sprinkle with ground pepper is optional. Bake 15 minutes in the preheated oven, until asparagus is tender. A little sweet pea wanted to help his mama. Uh oh! We are not big on hot dogs and buns. Hubby and I anyway. I pretty much buy a package of 100% beef hot dogs and store them in the freezer. I will make one hot dog when I open the package and then slip the remaining 7 into individual snack bags. Then I put all 7 little bags into a freezer Ziploc and write the date I bought them on the bag. 1-2 times per month I will grab a hot dog out, defrost for a few minutes and then grill or cook in a pan. Madie likes to dip the bites in mustard and ketchup. It's a simple, easy, protein meal. And she enjoys it. She dips them in mustard and ketchup. It's a simple, easy, protein meal. And she enjoys it. Hubby and I took a vacation day to squeeze in a short dirt bike ride/date. With Ride for Kids less than a month away, it was time to get back in the saddle. Rode some trails near Silverwood Lake and Lake Arrowhead. Perfect weather! And a little recap on our babies. Nicolas turned 4 months old yesterday. Thank you Ty Montee for the scallop recipe. I picked up 5 scallops from Sprout's today because I needed to swing in for vitamins. Decided to attempt your recipe and use Madie's help after school. Besides wiping raw fish and raw egg all over her shirt numerous times, she crushed the Ritz crackers with a wooden mallet, and helped dunk the scallops in egg and roll them in the crackers. Cooked them in olive oil for about 1.5 minutes per side. We ate them as appetizers before bath and then a seared Ahi tuna steak dinner. We all loved it. I was looking for an emergency dessert when I realized a teacher at daycare had a birthday Friday. Usually I would make something but had to work so I ran down to Trader Joe's. First I popped a mini rose bush in my cart then grabbed the first employee I could find and asked her what the best dessert they make is. She responds, "Oh! Hands down it's the Babka." Leaving daycare the other morning I noticed a husband and wife leaving with their newborn baby. I asked if they were touring the school and they said yes. I explained what a great school it was and that we toured many schools before realizing this was by far the best one around. They said thank you and I got in my truck. Backing up I quickly realized they had pulled their tailgate down on their truck to change the baby. In a tote! I had whiplash looking twice and then immediately rolled my window down to say "now that's a genius idea. She mentioned Pinterest. And that she bought it at Target. It was something I had to make so I went straight to Home Depot. 40 gallon clear tote for $10. Katlyn Peters helped me load it up and get the pics. Thank you. Now I will have a much easier way to change Nico in the back of my old Land Cruiser. Love creativity! And he didn't mind being in it. All you need is a clear rectangular long tote, blankets, we use a dog pad in case of accidents, wipes and diapers. As our little boy turns 3 months old in 2 weeks, I will be returning to work full-time. I still want to continue to raise money for this amazing charity. There was a guy in the check out line at Stater Bros. months back who was buying a few frozen pizzas. I noticed the design on the box and then made eye contact with him. I must have looked intrigued because I didn't have to say anything. He just said, "I come to this store just for this pizza." Good enough for me. James is so picky about pizza so he doesn't really ever eat it. Yesterday I randomly decided to grab one box of Screamin Sicilian Italian Combo. All meat no veggies. Baked it on 400 for about 25 minutes. Let's just say Madie and I got to share a small slice and he devoured the rest. Usually they run about $6.99 per pizza but for some reason when we opened the box it read $2.99, expires mid next year. Another cool part was the cut out mustache. That in itself should make you wanna buy one. Madie was not amused but Daddy was. The pizza tasted delicious, no tummy problems and inexpensive. This post is not meant for everyone following Madie's Kitchen. If you are a nursing mom, know someone who breast feeds, or will soon be a mommy...then I hope this post will help. As many of you know, I was able to nurse and pump for a full year with Madie. I did everything I could to avoid formula. And it all worked. Everything from making my own lactation cookies and shakes to getting up in the middle of the night to pump. Now with having a 5 week old and 28 month old, I don't have the time to pump as often and keep up with eating enough. I'm now drinking Mother's Milk tea a few times a day, just picked up this vitamin by Similac (Babies R Us) that you take with your prenatal to help improve levels of DHA, Litwin, and vitamin E in your breast milk, and then an occasional beer to help build production. The stress of Madie's jealously and the lack of sleep is not helping with production so I'm going to do everything I can to nurse and pump so Nico has his Mommy's milk. But I do realize that I have to suck up my pride and know that if I have to supplement in the future, that his nutrition is #1 and I never want him to not have enough. What did you do to help build your supply? If you used formula, what brands are best to try in case we need to go that route next year? I'm all ears. All this presidential talk everywhere, it only makes me want to bury my hands in the kitchen. Yes I voted. While hubby is at Taco Tuesday and Madie is with Nona, I decided to bake some yams + simple roasted rosemary potatoes. Took 3 (washed) yams and smothered them in olive oil/kosher salt, stabbed them a few times, slightly microwaved for 5 minutes and baked side by side with the other potatoes. Took the 1 lb. bag of Dutch yellow baby Idaho potatoes, washed them, quartered, tossed in olive oil, salt, pepper, and fresh rosemary. Baked all on a foil lined pizza pan in the toaster oven on 450 for 45 minutes or until soft and then broil for 15 minutes until browned. Additional salt and pepper to taste. Yum! I'm a fan. One of my husband's coworkers handed him this recipe and asked him to give it to me. I think she thought I would make pumpkin purée from scratch and use this recipe to whip up my own homemade pumpkin spice latte. Boy was she right! I never knew what a Sugar Pie pumpkin was until now. Luckily the Cal Poly farm store sells them for $2 and he grabbed me one during a lunch break. Was excited to use it for the purée, seeds, and carving. I made the lattes for our good friend Marshall and I. Not knowing what to expect, I'm pleased to say I never want to buy one from Starbucks ever again. I used cinnamon, cardamom, and nutmeg with the soft pumpkin. In the future you could totally use the canned pumpkin purée if you didn't have time to make your own. I haven't had a milkshake probably since Junior High. I remember Jack & the Box having a very good OREO milkshake but it hurt my tummy for days after drinking even a few sips. Decided to turn a milkshake into toddler fun. Madie practiced her counting and sorting with the Oreos, hammering the cookies inside the baggie, and adding everything to the NutriBullet. One shake split between 3 of us. I don't feel guilty. Lactose free OREO milkshake was delicious. Of course you don't need to use lactose free ice cream or lactose free milk. Chop your OREO's first. We used about 12 mini cookies, one cup of Berger's lactose free vanilla ice cream, and one cup of lactose free Lucerne whole milk. Made homemade Jack Daniel's BBQ sauce last week. Then realized a sleeve of our Ritz crackers were all smashed. Couldn't resist making the best meatloaf known to man. All you need is: ground beef, BBQ sauce, an egg, liquid smoke, and crushed up Ritz or Saltines. Combine, and bake. Serve with mashed potatoes and gravy. Toddler fun in the kitchen. Over the weekend I was able to make pumpkin purée while Madie made her own pumpkin seeds. I let the seeds soak and dry overnight. Then handed her a bowl, wooden spoon, the seeds, olive oil, salt, pepper, and cayenne pepper. She had a blast. Success! We had fun making this birthday cake for Nona. It tasted just as good as it looks. I've wanted to make this Snicker's cake all year. Well worth the wait. Next time I will make it all in one day so the consistency is accurate for each element (cake, caramel, nougat, buttercream, and ganache). Otherwise I'm pleased with it. And she was too.
