It got to 100 at home today. 118 where I had to work today and at least 100-105 this weekend. Yay! Where’s a pool when we need one? With that said, what kind of meals do you make when it’s scorching hot outside? Nobody wants to be outside over a bbq. Nobody wants to run the oven. I made rice in the rice cooker, peas and chilled canned tuna tonight. Hubby and kids had leftovers. Ever wonder why it’s called Chicken of the Sea? The company's official explanation for the name of their product: In the "old days", fishermen referred to white albacore tuna as "chicken of the sea". It was called this because the white color of its flesh and mild flavor reminded them of chicken. My all time favorite meal. I hope everyone had a wonderful Father’s day weekend. Thank you to our friends and family who reached out to check on James or dropped goodies off for us. We appreciate the love. He had teeth grafting done. Very painful surgery. My brother and sister in law delivered amazing homemade marinara sauce which was perfect for our crock pot chicken Parmesan, our sweet friend Christina Perusse Brenson surprised us with fresh fruit and amazing bread from The Rustic Loaf and our neighbor was so generous with hand me downs. It was perfect timing Tammy Hoover- Pribble. It kept the kids entertained all weekend. With that said, I also made a delicious and very simple swordfish. Basically just a little butter, chopped garlic, lemon rind, cracked pepper, little kosher salt, and fresh parsley. Used this recipe. I got two pieces of swordfish from Sprouts for less than $10. Made some steamed rice and sautéed Brussels sprouts. Kids actually enjoyed the rice and fish but couldn’t convince them to even try a Brussel. Happy Sunday! Nico was up at 6am. His usual. Madie slept in until 7am. Decided to surprise her with blueberry pancakes and then realized I didn’t have any in the fridge. A couple minutes later it hit me that we always have frozen fruit in the freezer so I tossed them into the pancake batter. Perfection! The Mickey face not so perfect. Just as I was going to flip them, Nicolas decided to get fussy and start hanging onto my legs. I couldn’t pick him up in that moment, so I attempted to flip the pancake hoping for a good flip. Oh well, not everything turns out the way we want it to. At least they tasted like perfection. Hubby gets back this afternoon. Longest 4 days ever. Being a solo parent is TOUGH. Husband is away on a boys weekend trip. Note to self: don’t let your nearly 4 year old tell you she’s baking biscotti’s with you at 7:45 when she’s usually in bed by 8pm. I gave in. Thought it would tire her out but instead she wanted to just keep baking. I finally got her down at 8:45. If you know biscotti’s...they are endless. ENDLESS! Separate your dry goods from wet. Slowly blend in eggs, bake for 20 minutes or so then rest for an hour. Slice them into their proper shapes and then bake on one side for about 5 minutes, pull out, flip and bake another 5 minutes. This process can go on for nearly another hour. Very very tedious; however way worth it. I’m tempted this weekend to dip a few in chocolate. Anyone done this? If so, what chocolate, do you let rest on counter or in the fridge? I probably won’t because then the kids will only want chocolate dipped but they could be fun gifts. Had to post something or sweet baby boy Nico because he’s down by 6:30 or earlier and didn’t get to enjoy the baking. He will enjoy a biscotti at 6am. Not to worry. Have a great night! If you love Andes Mints then you will love this super easy recipe to make cookies or a cake. For the cookies you will use one box of Betty Crocker Devils Food cake mix, 1/2 cup of vegetable oil, 3 eggs and one package of Andes Mints. For the cake, you add water to the cake mix. We split the cake mix into three, nine inch cake pans and baked for 20 minutes. Placed 9 Mints on top of each cake, waited until they were almost melted and smeared the melted mint on top of the cake. We actually meant to make the cookies; however forgot we needed to leave out the water. Best chocolate Andes mint cake EVER! Most of you know I’m one that loves to make cakes from scratch but when friends are over and the kids want to have a pretend cooking show followed by making dessert at 8:30pm. Vacation has begun. Much needed let me tell you. Most of today was spent working, oil change, smog check, buying a new pillow and got in a work out. But hey! That’s life. Last night while James took the dog to the vet at 6:30PM, Nico was already asleep and Madie and I got to work on this exfoliant we are trying to perfect. Recently my facial gal mentioned I should really use an exfoliant 1-2 times per week. I researched it and found the cost and ingredients. Figured I would rather make it myself so I know what’s really in it plus cheaper to make it myself. I’m using fresh lemons from our backyard, lemon zest, grape-seed oil, brown sugar, organic cane sugar, and lavender oil by doTerra. My skin has never felt so soft! I’ve been using it a few weeks now and see a huge difference. Lighter sun spots and my skin is glowing. In the shower wash off your makeup, rub in the exfoliant for about a minute, rinse and then wash with normal face wash. After shower use your toner, serum and moisturizer. I’m going to sell these 4 oz containers for $5.00 - covers the cost of ingredients and the container. I’m not doing this to make money. As we continue to age our skin is so important. Also fun time in the kitchen for me with Madie. The acid from the lemon juice helps even out your skin tone, gets rid of sun spots and softens dry skin. Happy Saturday! I have a work event tonight. Epicurean event out at Warner Bros that I’ve attended and worked for 17 years. While the kids are napping, I’m packing up the car, getting myself ready, but figured I would post this recipe first. I always say you should freeze at least a dozen cookies worth of cookie dough so you have a backup if you realize it’s someone’s birthday last minute or you just want a warm cookie. Wrap the dough in Saran Wrap and place in a Ziploc bag. Label with the date. Some recommend only freezing for 6 weeks and some say even between 6-12 months. Defrost for in the fridge or lay on counter for 20 minutes. These are by far the best chocolate chip cookies! Top-ranked recipe named “Butter Flavored Crisco Ultimate Chocolate Chip Cookie” Ready in 30 minutes Original recipe makes 36 Servings Yields: 3 dozen 3-inch cookies Ingredients: 3/4 cup Butter flavored Crisco 1 1/4 cups Brown Sugar 2 tablespoons Milk 1 tablespoon Vanilla 1 Egg 1 3/4 cups All-purpose flour 1 teaspoon Salt 3/4 teaspoon Baking soda 1 cup Semi-sweet chocolate chips (I used 1 cup + 1/4 cup Nestle Toll House Semi-sweet morsels) 1 cup Pecan pieces (I used 1 TBSP of chopped up pecan pieces) Preparation: Heat oven to 375. Cream butter flavor Crisco, brown sugar, milk, and vanilla in large bowl. Blend until creamy. Blend in egg. Combine flour, salt, and baking soda. Add to creamed mixture, gradually. Stir in chocolate chips and nuts. Drop about 2 measuring tablespoons of dough 3 inches apart on ungreased baking sheet. I like to roll mine in perfect balls. Bake at 375 8 to 10 minutes for chewy cookies (they will look light and moist) or 11 to 13 minutes for crisp cookies. DO NOT OVERBAKE. Immediately remove from cookie sheets and place on cooling racks, by using a spatula. They will continue to cook if you leave them on the hot pan. Long day on the road. This was calling my name. I try not to drink during the week but sometimes you just have to let your hair down. This is one of my favorite finds lately. A buddy of mine introduced me to it. Found this 4 pack at Vons. Born inside our nano brewery in Boston, Samuel Adams New England IPA is a medium-bodied, hazy brew featuring a big punch of citrus juiciness. The slight sweetness is perfectly balanced by the pineapple and grapefruit hop character, without being overly bitter. I hope Everyone had a lovely weekend. This recipe reminds me of the Northwood’s Inn red cabbage salad! I could eat all of it in one sitting. And that’s prior to letting it set overnight. I found this on Allrecipes and instead of 2/3 red wine vinegar I used 1/3 cup. Perfect as a side dish or pot luck. Ingredients: 1/2 cup canola oil (vegetable oil) 1/3 cup red wine vinegar 1 tablespoon white sugar 1 teaspoon kosher salt 1 teaspoon seasoned salt 1/4 teaspoon ground black pepper 1/4 teaspoon onion powder 1 head red cabbage, cored and shredded Directions: In a bowl, mix the canola oil, red wine vinegar, sugar, salt, seasoned salt, pepper, and onion powder. Place the cabbage in a large glass bowl. Pour dressing over cabbage, and toss to coat. Cover, and refrigerate 8 hours, or overnight, stirring occasionally. Drain before serving. Being a mom can be the best and it can be the worst. For some of us today is just another day. There’s no gifts. We wake up, make breakfast, change diapers, make food...just doing what we do. Over the weekend I just wanted to get some fresh mountain air, a good hike, naps, book reading, watching the kids sleep, plus enjoy some delicious food and wine. And that’s exactly what I did! That’s all I needed. Even if there were multiple melt downs, it’s never going to be perfect. I’m just thankful to be a mom. I’m thankful I can call my mom any time I want. This afternoon James took Nico to the hardware store and Madie helped me make dinner. She wanted to take a picture, so we did. I pretended to take a picture and instead made this video. It really captures her personality. Nico turned 1.5 years old last week. He got his first haircut on the 5th. And a few days ago started saying Madie. It’s adorable. He’s also teething a lot which is never fun for anyone. The photo in the left bottom corner is from “Fun sock Friday” at my favorite gym. I’ve finally started to find my rhythm between family, work and making a slice of space for “me.” Truly blessed. Hope everyone had a nice fun weekend. We had a busy yet fun weekend. Nico got his first haircut and he didn’t cry once. We made 4 dozen empanadas and got in some quality time with friends and family. I lost my voice. The second time this year. No clue why. Perhaps allergies. Kids are down. Time to clean up and fold a little laundry. This mama is exhausted! Have a lovely week. For the empanadas, it’s a family friends recipe and I promised not to share with anyone. Happy Cinco de Mayo! Madie and I got an early 2.5 mile in. Had a goal to take some pizzelles to our old neighbors until Madie realized there were pizzelles in the stroller. She says, “mommy I need a snack.” I told her we can have a snack when we get home. She says, “well I’m hungry; don’t you have pizzelles?” Tried my best to make her wait but she really wanted one. She also announces she has to go potty and we are at least a mile from home. Thank goodness for tons of trees and grass along our run. There’s always biscotti’s or pizzelles at our home. I gave some to our neighbor across the street and they liked them so much they bought a pizzelle griddle off Amazon. Super easy and fun meditation! This afternoon we are making empanadas and tomorrow I may attempt homemade wheat bread. Hello from windy Barstow! Camping with our friends. Kids are napping, husband doing the Toys for Tots Poker Run. If I’m lucky I will get some riding in as well today. I got a little in yesterday. Hit a good number of whoops to get a quad workout. With that said, I’ve been meaning to post this recipe for a few weeks now. My mother in law has been going through old recipe books and pulling out what she wants to keep. This recipe she pulled out and handed to me, saying she’d love it if I could make it sometime. Of course I’m always up for the challenge. I read “Prune Cake” didn’t know what to think. I’m sure some of you are reading this thinking what I was thinking. Will this actually be good? The answer is yes. The answer is actually 100% YES!!! It’s seriously one of the best cakes I’ve ever tried. I also researched it and found a similar recipe. I used 1/3 chopped cashews, vegetable oil and Karo syrup. The other calls for corn syrup, no nuts and canola oil. I love Ree Drummond’s little note “Now throw in the mashed prunes. And if your honey walks in as you're completing this step, shield the bowl with your body and stir quickly. What he doesn't know won't hurt him...” Please take the time to make this cake. You won’t regret it. We delivered slices to all the neighbors. One neighbor asked if they could have more. The kids also thought it was quite amazing. Fun activity with Madie tonight while Daddy was at traditional Taco Tuesday. Found this recipe for pickled veggies in the September issue of High Five Highlights magazine. I've never pickled anything so I thought it would be unique for both of us. The recipe called for the following ingredients: 2 large seedless cucumbers, 1 medium carrot, 3/4 cup rice vinegar, 3/4 cup hot water, 6 tablespoons of sugar, and 1/2 tsp. of salt. We used 1 tsp. of kosher salt. Before you begin: Trim the ends of the cucumbers, halve lengthwise, and cut crosswise if desired into 1/4-inch slices. Peel the carrot and cut into 1/4-inch slices. Process: 1) Put the vegetables in a 1-quart glass jar or other acid-proof container with a tight-fitting lid. We used two 8 oz. canning jars. 2) To make the brine, put the vinegar, hot water, sugar, and salt in a heat proof bowl. 3) Stir the brine until the sugar and salt dissolve. Let it cool for 15 minutes. Then pour the brine over the jar or jars of vegetables. Chill the veggies in the refrigerator for at least 3 hours. I of course did some research ahead of time and realized most pickle recipes don't call for rice vinegar it's usually white vinegar. And not too many have sugar so we probably should have left that out. We did add some chopped garlic and cracked pepper to our marinade. How long should we let them soak? I know Highlights suggests 3 hours but I was thinking more like a few days, week or so. All in all, we had fun. Madie wanted to keep eating the cucumbers. I will let you know how they taste when we finally open the jar and enjoy them. Good morning and Happy Sunday! I was going through old cookbooks that have been passed on along the years. I found one that my Mother in Law gave me a few years back that is titled "Light Cuisine" Cook Light ~ Eat Right, presented by Professional Home Economists in 1979. The recipe that most intrigued me was the pumpkin soup. I had never made it before and I had everything in my pantry at home. The woman who shared the recipe is Barbara Gershman. She mentions that a student shared this recipe for their annual foods class Thanksgiving feast and it was a tremendous hit! Notes: This soup can be made ahead and refrigerated. The soup can be enjoyed hot or cold. If it rests in the fridge overnight, it will be thicker the next day. Optional: add the Garlic Kale Sesame topping over the soup before serving. I made a few people try this but it was too good to give away. Fall is here. While on vacation this week, we were at Von's passing through the bakery. I asked James if he wanted a bagel sandwich for lunch. Of course! I asked what kind of bagel, plain or wheat? He said he likes the "everything" bagel that he's had them at catered work events. I told him I couldn't believe it since he hates onion. I didn't want to call him out so we got him the bagel. Chasing Madie all over the store we forgot the meat and avocado. Lucky enough we were in downtown Big Bear just after that and I mentioned asking the local sandwich place if they would sell us some Boar's Head lunch meat and Avo. $4.50 total, when a whole sandwich from there would have been $9-$10. Th place was packed and the sandwiches looked amazing. We will go back. Went home and whipped up our sandwiches. He doesn't like the "everything" bagel. Just as I thought. One of my favorite things about life...is hummingbirds! They never have a dry feeder. All you need is a cup of water and 1/4 cup of sugar. Heat the water and stir in sugar until dissolved. Make sure your feeder is clean and the sugar water isn't hot before pouring into the feeder. Keep extra in the fridge. I had these for the first time when I was about 13 years old. A family friend named Dick and I took his plane all over CA. One stop was near Yellowstone where the landing strip was at a small campground. We walked to a restaurant and then saw a play. These tomatoes were served and I remember them till this day. I've always baked them but last night my husband was grilling Italian Sausage so we added the tomatoes to the grill as well. They came out very good! So simple. Just cut your tomatoes in half, spread on your favorite pesto sauce and layer the tops with your favorite cheese. Grill or bake until the tomatoes are soft. My sensitivity to dairy began in high school. Some people are sensitive from birth and some don't realize it until they are in their 30's, 40's and 50's. As we get older our allergies change. I became allergic to cats at 30. After having them for many years prior. Either way, I'm beyond thankful for the LACTAID brand who has many lactose free options such as milk, cottage cheese and different flavors of ice cream (it all tastes like the real deal and expires way later than dairy products). If you've not been feeling so great lately and you've never given up dairy, we are lucky we have an alternative. You will be pleasantly surprised. However my partner in crime absolutely loves scotch and over the past year has become a fan of the 1950's drink that is now quite popular in many restaurants. The Moscow Mule / AKA: The Vodka Buck is made with top shelf vodka, lime juice, and ginger beer. You can alter your recipe to your liking. This is one way I make it for him. Fill your copper mug with ice, add 2 shots of vodka, 1 shot of Limoncello, generous squeeze of lime or lemon, splash of margarita mix and top it off with a generous amount of ginger beer. Most recently I found single bottles of ginger beer at Trader Joe's for $0.99 each. One ginger beer will make about 4 drinks. If you've never tried one and you are a vodka fan...you won't be disappointed. Fine strain, using a chinois, into a large container. Add remaining ingredients and stir to combine. Fill bottles one inch from top using a funnel or beer siphon wand. Cap and refrigerate for up to two weeks. Shake before serving. *To make simple syrup, combine one cup sugar with one cup boiling water. Stir until sugar is dissolved. Shrimp scampi. Even Madie enjoyed it. She's already asleep with a full belly. Been so hot lately it's been tough to motivate myself to make a dinner over the stove that takes multiple pots and pans which includes many dishes. Worth it though. This really only takes 15-20 minutes. http://madieskitchen.com/2013/11/spicy-shrimp-scampi/ Short version recipe: - cut up your garlic cloves and slices of lemon. - in a large skillet you start to cook your garlic until soft with a 1/2 cup of olive oil. Sprinkle in some red pepper flakes and drained capers. Let simmer until pasta and shrimp or chicken are done. #garlic - in another pan you cook your shrimp for a couple minutes on each side in a little olive oil or you can cook the shrimp right in the garlic pan. Squeeze a lemon wedge or two over the shrimp. - boil a pot of water with a sprinkle of salt and cook your favorite pasta al dente. We used angel hair tonight. 1 pound box so you have leftovers or use half the box. Or buy fresh pasta from the local Italian deli. - drain the water and toss the noodles into the garlic and shrimp pan. Stir it all together then add a dash of salt and pepper. - put your pasta in bowls with equal portions of pasta and shrimp. Top with fresh shredded Parmesan or Romano cheese. I've wanted to grill peaches on the BBQ for years. Enjoyed a nice steak dinner with friends last night and realized I had 2 fresh peaches. This would be the perfect opportunity. Marshall and I researched many sites and then created our own recipe from what we had in the house. If you don't have this balsamic glaze, then you can make your own in a pan with balsamic vinegar and sugar. Here's the steps we took: Heat up the grill to medium rinse and pat dry your peaches Cut peaches in half and remove the pits Crack some pepper on the inside of the peaches Spray the BBQ with a little cooking spray or olive oil Lay the peaches flat down and grill for 5 minutes or until soft closing the kid Flip peaches over and brush on the balsamic glaze grilling an additional 2-3 minutes with lid open Remove peaches and put a tablespoon of blue cheese in the center of each peach top Lighting drizzle agave nectar or honey over the top Enjoy alone or as a side dish to your favorite BBQ meal. We took our first stab at lobster last night. Costco is selling warm water lobster from Brazil for $21.99 per pound throughout the week. I bought a half pound one and got pointers from the lobster guy. Boil for 3 minutes. Pat dry, cut line on bottom, rub olive oil salt and pepper on flesh, stick a chopstick inside so it won't curl up, grill for 4+ minutes until charred. Dip in melted butter.
