My tips for making meal prep quick and painless: 🥦 Roast a big pan of veggies at once and use for multiple meals. 🍙 Use 90 second microwave packs for rice or quinoa. 🍗 I typically use pre-cooked chicken sausage for lunch, so all I need to do it chop it up and it’s ready when I want to eat! 🍓 Pre-portion fruits and veggies for easy grab and go! . . . How much protein do you need to eat? - 🔹This was one of the big questions Chana (@fueledbyscience ) and I discussed in our talk I posted on my blog. Adding protein to your diet is something you probably heard over and over again but how much should you actually aim for🧐? - 🔹The general recommendation given was 0.5 grams of protein per pound of body weight. The easiest way to figure that out is to divide your body weight by 2 📱 So if you weight 160 pounds, you will need to eat 80 grams of protein per day. What is great about this recommendation is that it account for our different sizes and is scalable to anyone😃 - 🔹Let go a little further and see exactly what 80 grams of protein looks like throughout the day: 🍗A chicken breast has roughly 50 grams of protein 🍙100g of tempeh has 20 grams of protein 🍦100g Greek yogurt has 10 grams of protein ❗We are already at our requirement❗ 🥚1 egg has 6 gram of protein 🍲100g of chickpeas has 19g of protein 🥜2 tablespoon of peanut butter has 8 grams of protein 🍛1 cup of cooked quinoa has 8gram of protein - 🔹So before you run down to your local supplement store and load up on protein powder, see how easy it is to get a lot of protein in your diet😛Vegans and vegetarians will need to eat slightly more food throughout the day to hit their targets but it will still be easy - 🔹As with everything, there are acceptable modifications. If you are an athlete, you will need to increase your protein uptake to 0.7-0.8grams per pound of body weight. If you are 160 lbs and an athlete, you now require a bit more protein, 128 grams per day - 📝Protein tip⏬⏬ All foods that you buy will have a label with how much protein it contains per certain amount. Snack: BIG PROGRESS TODAY!! I had the chance to totalllyyyy abandon my plans and eat a bunch of sweets, but I opted for a single 60 calorie square of ghiradelli dark chocolate. Later, I ate less of my Frittata, and did not add walnuts to my flatbread (thats yesterday’s flatbread pic, WITH walnuts) making up the calories. I’ve been making this every night for breakfast (when I’m not eating cottage cheese of course). . 2c quick oats 1 c Greek yogurt (or full fat yogurt) 1 c almond milk 3 tbsp maple syrup 1 tbsp cinnamon 1-1/2 c frozen blueberries Mix all together, let sit overnight and enjoy! Stir-frying is easy, allowing for quick, healthy meals, and is a great way to use up leftover veggies in the fridge.⁣ ⁣ So here's a quick tutorial on how to stir-fry! (For more details, go to "Infographics" in our Highlights, and print our Guide to Stir-Frying for free!)⁣ ⁣ 1. Pick & Prep Ingredients - protein, aromatics (garlic, shallots, onions, green onions, etc), and veggies. There's no wrong combo!⁣ ⁣ 2. Make Stir-Fry Sauce - mix together 3 cloves garlic, 3 Tbsp soy sauce, 1 Tbsp rice vinegar, 1 Tbsp brown sugar, 1/2 cup stock, 1-1/2 Tbsp cornstarch⁣ ⁣ 3. Cook! - first the proteins, then remove from wok, then cook aromatics and veggies⁣ ⁣ 4. Add Stir-Fry Sauce - toss cooked proteins back in, then make a donut in the wok by pushing all the ingredients to the sides, and pour in the sauce. Let it darken and bubble!⁣ ⁣ 5. Finish with a squeeze of citrus juice. Day 51 of #nospend19 and we are eating more of our #frugalfood ! Keeping that #grocerybudget in check is a daily task where I must always be aware of what I'm feeding my family and the cost. The #mealplan has needed very little adjustment this week, and we are sticking with it. This morning was a giant (6x the regular sized recipe) batch of pancakes. The extras are going into the freezer for future meals. Tonight's dinner is pepper steak, made back in September and frozen for nights like this. I also have what I call zucchini mix thawing. There hasn't been much available for lunch and this is one of my favorite freezer meals. There are pros who will tell you to spend $100 or more and then a whole day (or weekend) cooking meal after meal... if that works for you awesome! If not, don't be discouraged. Just double up a recipe for a dinner your family likes that will freeze well and toss the extra in the freezer. Do it here and there when the items are in season or on sale. (I strongly emphasize making the meals when the ingredients are cheap - it will save you so much money!) You don't have to spend a lot of time or money preparing 20 meals. Just a little something when you can will make a difference. This recipe makes me want to be on an island 🌴☀️🦜🏝🍹 . . . ✨INGREDIENTS: . -4oz chicken breast -jerk seasoning (to taste) -1/3 cup low-sodium black beans, drained and rinsed -1/2 cup COOKED yellow rice @goyafoods 💛 -2oz fresh pineapple, chopped🍍 -1/4oz onion, chopped -1/2 avocado🥑 . -fresh cilantro, chopped (to taste, don’t add if you don’t like, same with the onion... you can also eat this with just the pineapple or even without it and substitute it for mango!🥭) . . ✨HOW TO MAKE: Marinate chicken in light olive oil, chopped cilantro, and jerk seasoning. Cook rice according to package, let cool and set side. Drain and rinse black beans, set aside or heat up - up to you! Cook chicken breast in skillet on medium heat until done and brown on both sides. While chicken is cooking, chop pineapple, more cilantro, and red onion and toss to make a salsa. Garlic spinach stir fry! There’s something magical about the combination of roasted garlic, onion and crushed cayenne pepper! The aroma is irresistible. This combination accompanied with spinach is what I call a super food winner! It’s so simple and easy to make. . Double tap if you like this dish! . RECiPE: Spinach ( 2 bunch; wash and strain) 1 medium onion (diced) 4-6 cloves garlic (diced) 1-2 whole cayenne pepper (cut into pieces) Cilantro (2 tbsp) Salt Oil . In a hot pan, add spinach and cook about 3-4 minutes. Throw away access water. In a small frying pan, add oil. When oil heats up, add onion, garlic. Roast onion and garlic until brown. Add cayenne pepper and roast with onion and garlic about 30 seconds until turns dark. Transfer the roasted onion, garlic and pepper on top of cooked spinach. Mix it up. Add salt and garnish it with cilantro. I call this dish ‘tiny tiny fish curry.’ 😂These are called ‘kajoli mach’ in my native tongue. Google translated it as ‘ailia punctata.” They are the size of anchovies (you can definitely cook anchovies the same way). Super delicious fish. I got it from the freezer section of a Bangladeshi grocery store. My husband generally doesn’t like eating fish due to bones. But once he tried this dish, he loved it. So I continued the same recipe for years (I accidentally came up this recipe right after getting married.) Why change something when it’s sooooo good, right?! 😉 . Let me know what you think about this dish in the comment below and tag a friend who might like it! ❤️ . RECIPE: Lightly coat the fish with salt, turmeric and black pepper. Shallow fry it until brown on both sides. Put it aside in a plate. In the same fish frying pan, add oil, onion, garlic. Once onion and garlic softens and becomes brown, add turmeric, cayenne pepper, cumin, bay leaf, and fresh diced tomatoes. Put a lid on for a minute or two. Once tomato softens, add about 1 1/2 cup of water to the sauce. Once sauce bubbles up, add the fried fish. Simmer about 10 minutes. Garnish it with cilantro. Serve with rice.
