Because this experiment actually turned out well, I'm going to post this up for those that need a "Thanksgiving leftover dish" recipe to try. Best for hearty brunch!
Part 1 - Leftover stuffing mixed with biscuits or corn bread. Chop and mix in a bowl together and add 1 serving of egg whites (or a whole egg if you'd like). Make sure the liquids are mixed in real well and the mix has a forming texture so you can make a patty out of it. 1/2" to 3/4" thick is ideal so it's not too doughy. Pan fried with a tad bit of butter until golden brown on both sides.
Part 2 - Leftover turkey, ham, chicken, or whatever proteins you have have sauteed in olive oil. I've also added some chopped spinach and jalapenos for some color and a kick! Black pepper and a little bit of garlic powder to "wake up" the flavors a bit more. Cook until ends are crisp, not burnt.
Part 3 - Sunny side up egg, 1, 2, or even 3... However many you'd like. I only had one left soooo yeah lol.
Part 4 - The plating... Just as pictured, have your patty as a foundation, carefully stack your proteins on top, and slide your egg(s) over the top. Finish off with some spinkled pepper. Done deal!
I hope you all enjoy this... Of course it won't taste as great if the leftovers you have suck in flavor, but most of my stuff was pretty bomb. I think I'm going to start posting up some recipes of some random stuff whenever I can cook without diet/prep restrictions haha!
