Court: Celebrity guest chef @iwantmoarf00d joined me today to make this spicy broth type deal with lots of spice and then more spice. The dish included boiled long grain rice, fried tofu and potatoes and a red pepper broth with mushrooms, asparagus, onion, kimchi and carrot.
Andy: To make the potatoes and tofu I first fucked up by marinading the potates before i had par boiled them in a spice mix consisting off ground cloves, star anise, fennel, ginger, cinnamon, sugar, salt, pep pep, fresh garlic and chilli. I then par boiled these potates for 10 mins and drained them, saving the water to use for the broth (whilst pretending my fuck up was deliberate) I then re made the spice rub and mixed it in to the potates and fried them. The tofu was made by chopping and pressing it and marinading it in a mix of pasata, siracha chilli sauce, garlic, salt and pep pep (pepper). This was then lightly coated in flour and fried. If you look closely, you can see me in the spoon.
Court: To make the broth I used the left over water that the potatoes were boiled in, added two tbsp of red pepper, some kimchi, carrots, mushrooms, asparagus, garlic and onion. I made the shape of the rice with an ice cream scooper !!!
