This aged goat cheese is bright and tangy and tastes like sunshine. To highlight on its delicious brightness, top it with some honeycomb and drink a fruity, effervescent Belgian lambic with it. Vermont Creamery is a pioneer of the American artisan cheese movement. Allison Hooper (@ahoopervt ) was and still is very strongly inspired by classic French cheeses and wanted to make her own versions for the American audience, at a time that goat’s milk cheese was not common and commodity, factory produced processed cheese was king. Vermont Creamery’s cheeses are super approachable and delicious and I think a goat cheese hater would be hard-pressed to find anything to hate about it. Photo by @tomalesbayfoods . Portrait of a cheesemaker: Mateo Kehler ( @mateokehler ), @jasperhillfarm Mateo and his brother Andy could easily be called the “kings of the north,” with their efforts to revitalize a tiny rural community in northern Vermont into an international juggernaut creating some of the best cheeses in the world. Andy and Mateo grew up in Colombia, but their family moved back to the United States in the 1980s. Since then, every summer growing up was in Greensboro, Vermont, a tiny town of 200 just below the Canadian border. Mateo went on to do construction and both brothers came to the realization that they should create an alternative to the pastoral land other than the traditional dairying other farms were doing in the community. In 1999, they pooled their money together and bought a plot of land in Greensboro. In the same year, the town lost 3 of its 10 dairy farms. In 2003, Jasper Hill was born-- a cheesemaking epicenter that at the heart of it is a catalyst for social change. The goal is to make cheese as hyper-local as possible to create a “taste of place,” which became Jasper Hill’s slogan. They have their own state-of-the-art aging facility and microbiology lab to create the best cheese possible using primarily raw milk and only indigenous cultures. On the eve of my trip to Vermont, I want to share a brief history of Vermont’s cheesemaking roots. Vermont became populated by settlers that inhabited the rest of New England and New York. Those spots all got filled up and overpopulated super fast as everyone wanted their own share of farmland. Eventually they had to move north and west to find their own share of land. Between 1760-1764, seventy four towns were founded in Vermont, primarily along the Connecticut River Valley. After the Revolutionary War, Vermont saw a big boom in immigration as families knew the danger was over, they were safe, and now had the opportunity to grow their families and get a bigger farm. Between 1772-1790, Vermont’s population grew from 7,000 to 85,425 settlers. As far as cheesemaking goes, Vermont’s farmers set their sights on overseas markets. “American” or “Yankee” cheese (an English-style hard cheddar) was the primary cheese made, shipping to the West Indies, England, and eventually to Canada. Small country stores became primary sources of distribution. Instead of money, farmers would trade cheese for goods, which shops would then ship and export off. Cheese was considered a stable and profitable investment, so it held better weight than gold. With the opening of the Lake Champlain canal that connected the “6th Great Lake” with the Hudson River, shipping cheese became that much easier to send to New York City, which made Vermont business folk lots of income. With the opening of the railroad, the market for Vermont cheese ever expanded. From the beginning, Vermont was and still is revered for its careful attention to tradition and high quality in their cheesemaking. Also, how great is this vintage postcard I found online? Rupert from @considerbardwellfarm is their take on an Alpine cheese, but it has its own twist. Inspired by classics like Comte or Gruyere, Rupert is embossed with its signature whale to demonstrate its big flavor. It is savory and complex, and I usually get citrusy, orange peel notes and hints of butterscotch and pineapple. Getting into the warmer season, I would love to grill some pineapple and serve it with this cheese thinly shaved on top. I’ve also had it with spiced cherry spread, which tastes like Christmas in a bite. This is a cheese that I always find something new to love with every taste. Have you had this one? Clothbound cheddars are nothing like the generic, run of the mill commodity cheddars folks are generally used to ranging from “mild, medium, or sharp.” These cheeses are painted on with lard and lovingly wrapped in cheesecloth to age, constantly being flipped to ensure an even, dry paste on the inside. One advantage of this method is that the cheesecloth is breathable, so the resulting cheese is much more complex in flavor. Many cheddars come in huge 40+ lb blocks and are vacuum sealed in plastic. Though there are some delicious ones out there of this variety, generally, there’s only so far a flavor can get in this type. One new clothbound cheddar collaboration that is exciting to see is between @graftoncheese in Vermont and @crownfinishcaves in Brooklyn called Barnburner. This brick-shaped cheese is smoked then shipped to Crown Finish, an aging facility made out of a former lagering tunnel under the streets of Brooklyn, to age to perfection. Once cracked open, it is fire orange and has a lovely subtle smokey campfire heat. This cheese is perfect for getting into grilling weather to put on burgers and topped with arugula and mustard. One of the hardest questions a monger can be asked is “What is your favorite cheese?” because that is like choosing a favorite child. It changes all the time. But if I had to choose one, no exceptions, it would probably be Harbison from @jasperhillfarm . Harbison is one of the first cheeses that I came across that taught about how drastically cheese can change over its lifetime. When it first arrives at the retailer at about 6 weeks old, it has the texture of maybe a medium-soft Brie (don’t get it twisted, I’m not calling it a Brie because that is a disservice to it). It’s a little springy and mildest in flavor, just a whisper of cauliflower. As it gets older over the next few weeks, the inside breaks down into a custardy-pudding texture and the spruce band imparts a woodsy flavor and the cruciferous vegetable flavor gets more intense. My favorite time to enjoy this cheese is when it is as close to its “expiration date” or even a little past it, when its texture is the most runny and the flavor most intense. At this point, I love to bake up some frozen French fries and dip them into that pool of woodsy goodness. It’s also, more traditionally and not surprisingly, awesome on bread or roasted potatoes. One way to tell its stage of ripeness is to lop the top off and stick a spoon in. If it stands straight up, it’s definitely on the younger side still and is going to be milder. If it looks like it’s chilling in a cheese hot tub, laid back against the spruce edge, it’s going to be more intense (and better in my opinion). Harbison is ACS’s current reigning champ as number one in the country in 2018 and it’s not difficult to see why. Unfortunately I often have to try to justify why people should invest in this cheese (wheels usually run around $20+ a round and it’s one that you really shouldn’t have just half because that’s just a mess). I like to say it’s a “treat yo’ self” cheese. If you’re celebrating something or you’re having friends or loved ones over or maybe you’re trying to impress someone, or, hell, you’ve had a rough day and a Netflix binge is in your future, this is your cheese. It seems expensive at the counter but I guarantee it’s worth every penny. 👌 Смотреть полностью

It has a buttery, soft flavor that is super approachable for just about anyone, even folks that claim they don’t like goat’s milk cheese. This cheese spreads great on just about any vehicle, whether you prefer bread or crackers, and contrasts beautifully with tart and juicy fresh cherries. I’m a beer person and love this cheese with a saison style because its spicy qualities compliment Cremont’s buttery, cream cheese frosting-like flavor. One of my favorite smoked cheddars on the market is @graftoncheese ’s maple-smoked cheddar. This cheese doesn’t taste like liquid smoke or the day after a week at Boy Scout camp (you know that smell/taste, it’s like licking the embers at the bottom of a campfire after it’s burnt out) like many smoked cheeses I’ve tasted over the years. In this one, the maple smoked cheddar is subtle and allows the flavor of the cheese to shine. This cheese is made the slow, old-fashioned way: the cheese is cold-smoked over maple chips for four+ hours. The result is a much more balanced flavor. The smoke is merely a note in the cheese, rather than all you taste. One reason for this, in my opinion, is that this cheddar is made with raw milk. This means that since the milk isn’t pasteurized, it maintains the rich and complex ecosystem of beneficial and delicious bacteria, lending to a more layered and developed flavor. Often, I find flavored cheeses (smoked cheeses included) as a coverup for mediocre cheese. This one is not the case. Alpha Tolman is @jasperhillfarm ’s variation on Alpine cheeses, particularly the French Beaufort. Alpha Tolman is brothy and meaty like pan scrapings and melts like a dream. You can expect big beef broth and caramelized onion flavors. It has a deep nuttiness like the stickiest peanut butter and a hint of the grassy pastures that their Ayrshire cow herd grazes on. Jasper Hill is all about terroir, or “taste of place.” Founder Mateo Kehler famously has said that Jasper Hill is not in the business of farming cows or even making cheese, but in farming and cultivating microbes. Microbes are what drive everything that they do. Also be on the lookout for their new salamis. They have pigs that feed on the leftover whey from cheesemaking that they’ve recently been turning into salami. They have an Alpha Tolman version that the pigs feed on the whey and the salami has hunks of this cheese in it. I can’t wait to try it, hopefully soon! It’s brand spanking new on the market, so I couldn’t find any pictures to show of it on Instagram. I’m hoping to try some when I go to Vermont (and smuggle some home), I’ll keep you guys posted. One really exciting goat’s milk cheese producer out of Vermont is @twigfarm . They are a farmstead creamery that creates only raw milk goat’s milk cheeses. I mentioned in an earlier post last month about how rare that is to find in the US because of the 60 day rule (for more about this, check out my post on April 20, aka Raw Milk Cheese Appreciation Day). They only make a couple cheeses, but their Square is stellar. Underneath its mottled greyish natural rind, the firm bright white paste lends flavors of toasted nuts and a hint of grassiness. This seasonal cheese is generally available June-February, so be on the lookout this summer for this lovely package. It looks like a present in the best way, how it is square in shape and indented in a cross on top so it looks like a string was wrapped around it and tied in a bow. This shape is due to its making: it is hand ladeled in cheesecloth and then scooped up to drain. Have you had this cheese? Moses Sleeper from @jasperhillfarm is a soft ripened pudgy cheese named after a local Revolutionary War patriot that died as a child in battle. This cheese is big and cabbage-y and tastes like roasted artichokes. This cheese was one of the first for me that when I first tried it, I was like, this cheese tastes like vegetables. This cheese is a close iteration of a classic French Brie, but don’t tell the folks at Jasper Hill that. They hate getting their cheeses called Brie. They even had shirts last year at ACS that had a stapler on it and it said “OMG is this a Brie?!” Not all soft ripened cheeses are created equal and soft ripened doesn’t always mean Brie. But if you like Brie, this is the next step up. This one of the best pasteurized and American versions out there. Eleven Brothers from @bostonpostdairy is a farmstead goat’s milk cheese made on a family farm. Boston Post Dairy is owned by Robert and Gisele Gervais, along with their fifteen children-- 11 boys and 4 girls. Their four daughters help with the cheesemaking. This cheese is named after their eleven sons because in their words, “anyone who raises boys knows that it takes more work, but the work is worth it.” The labor intensive process of making this tomme-style is much the same-- constant turning, washing, and brushing until the cheese reaches the right age for the perfect age profile. Its flavor is rich and buttery and just a bit toasty. This rustic cheese is a perfect post-meal palate cleanser or the star on your next cheese plate-- it’s super versatile. When it comes to cheese, Vermont is widely famous for cheddar. Cheddar has been made in Vermont since day 1. Settlers made cheddar styles in other states and because of poorly sustainable farming practices, the pattern was that settlers would inhabit land, they’d try to grow and harvest wheat, eventually exhaust the soil, and dairying would drive the economy and the cycle continues and repeats itself in another state. One of America’s famous historical figures to come out of Vermont is Calvin Coolidge, who hails from Plymouth, Vermont. @plymouth_artisan_cheese , based there today, pays homage to Coolidge by following a recipe for their cheddar originally written in his era and recreated today. It is said that Plymouth is closest to what the early British settlers consumed in the early 1600s, following a cheddar recipe similar to Britain’s in its complexity, but also starting to come into its own as far as an American identity. Plymouth Original is coated in thick red wax and inside is a crumbly, dense cheese that has an orange peel bright tang and a hazelnut skin warmth. It’s got just the right amount of creaminess and bite that is truly addictive. Not going to lie, this is one of my favorite cheddars I’ve tried in a long time. It’s approachable for cheddar fans and nuanced enough to keep nerds interested. It feels way nostalgic, like those cheddars coated in thick wax you’d get for Christmas, but way, way better. Even though it’s based off a very old recipe, it feels new and exciting, way more so than your average cheddar. Enjoy it with a crisp cider and some whole grain mustard.
