NEW DESSERT🤩 Shoutout to @fluffinjourney for the idea.😊 ———————————————————————— Mini Keebler graham cracker pie crust (4 sp) 3 tbsp fat free cool whip (1 sp) 1 tsp sugar free cheesecake pudding (0 sp) Lucky leaf lite apple pie filling (0-1 sp depending on amount) Bake crust at 375 for 5 minutes. Mix cool whip and pudding. Let crust cool. Put cool whip mix in crust and place in freezer for 30 minutes. Add pie filling on top. I wasn’t going to do another side-by-side until I hit 50 lbs down....but I needed a little encouragement and fire under my tush to keep me going so I cheated and did a selfie 😝 (Still holding until 50 lbs for full body.) On the days where I get frustrated and can’t tell a difference....I’m going to have to start looking at where I started. What a difference ~40 lbs can make! This is just what I needed to get my mindset back in the game 💃🏼 Also funny to me...I was in a hard spot emotionally & mentally when that photo on the left was taken...and I never noticed until now how much I can see it in my eyes. I was STRUGGLING. Prepped some breakfast for the week tonight 🍳 10 Eggs + 1 pack of Jimmy Dean Turkey Sausage Crumbles + 1/2 cup of Reduced-Fat Shredded Cheese + Pepper to taste. Mixed it all up, split it between 12 muffin tin spots and baked at 350° until eggs were cooked through. They came out to 1 point a piece in my WW Recipe Builder. This weekend was supposed to be relaxing and I close a date-day with the hubby on Saturday... well that completely changed when our doggie got sick in the middle of the night. So Saturday we spent time bonding over a ton of laundry, dog bath, sweeping, mopping and carpet cleaning 😫 our doggie wanted us to get a head start on spring cleaning apparently lol. Most importantly - puppy is better now 🐶🐾❤️ I have been having some crazy busy weeks at work which mean exhaustion by the time I get home. So today was #mealprepsunday to keep me #backontrack for the week💪 . . Meal 1: chicken enchilada bake from Pinterest - 5SP . Meal 2: skinny beef stroganoff from Pinterest - 9SP . Both of these I doctored a little and the stroganoff I can make even less in points but I started with the higher point recipe and it was too late when I realized it lol. Things that I am not yet used to, my kids eating as much as they do. I have 6 kids, I should expect that we will consume a large amount of food. I make crazy large quantities. Add 1/4 cup Trader Joe’s fat free pizza sauce (1sp) 2 oz Trader Joe’s lite mozzarella cheese (2sp) and 1/4 cup kraft fat free cheddar! (0sp) Bake at 400 for 14 mins! It's been a busy couple of days and I forgot to post some yummy meals. So, I'll just throw them together in this post as I sit in my kitchen, waiting for tonights dinner to cook! Last nights meal was really enjoyable. Carrot fries in the air fryer, baked cauliflower topped in a yogurt and panko crumb mixture (check out wwgays on YouTube for the recipe) I changed mine up a little as they used hot sauce. I used ketchup and some malt vinegar. Anyway, they were so good and I ate them with tzatziki sauce. I also made Turkey meat balls topped with home made spaghetti sauce and a can of pineapple tidbits. Everyone loved dinner, which was awesome. . . This mornings breaky is quickly becoming one of my favs! Scrambled eggs with red onion and Turkey breakfast sausage, topped with light mozzarella cheese and a drizzle of sugar free syrup. I love my sweet and salty things. My mouth is watering right now, waiting on my cauliflower shepards pie. Ya 👏🏼girl 👏🏼don’t 👏🏼mess👏🏼around👏🏼with👏🏼taco👏🏼night👏🏼 . Slow Cooker Carnita Tacos with TWO Homemade Salsas🤤🌮🐖🍅🥑🌽 . This is friggin’ SO good and even though it’s a little time consuming, so friggin easy! I prepped my salsas a day before. You can make it a million different ways and adjust the points accordingly! You can dress this up Mexi style or enjoy it with BBQ sauce! The recipe for the pork is on my Pinterest and I actually followed it to a T! Below are my salsas if you’re interested and the #weightwatcherpoints . Black bean and corn salsa- 1 can of black beans, 1 can of sweet corn, both rinsed and drained. Add 2 chopped jalapeños (seeded), handful of chopped fresh cilantro, juice of 1 lime, and some salt. Stir and refrigerate at least 30 mins. . Avocado pico- 2 tomatoes diced and seeded. One chopped green pepper and jalapeño (both seeded). 1/2 white onion. Handful of chopped fresh cilantro, salt and juice of at least 1 lime. Stir and refrigerate for at least 30 mins. If your avocado is starting to brown, use more lime juice. . I had 3 tacos with corn tortillas (5 points) and 3 oz of the pork (5 points). I used some fat free retried beans to get some extra proteins for no points! The avocado salsa is about 1-2 point. For leftovers, I served with 1/2 cup of rice (3 points). . Can I be real for a second? Depression is hard. Not just in the “man, I feel sad” kind of way....but in the way that it shows up on the most normal, seemingly good days and knocks the breath out of you. Today is one of those days for me. Typically Sundays are one of my favorite days of the week but today has been hard. Depression is a liar. It takes those fears in your heart, throws them up on the big screen of your mind and tells you it will always be this way. It tells you that those mean things you think about yourself, everyone else thinks that about you too. And you believe it...because depression distorts your reality. . . . I’ve dealt with my anxiety pretty openly over the years while keeping the depression side a quite struggle. Fear of judgement is always pretty real in the mental health realm. Because if you get it, you really get it. But if you don’t, it can just look dramatic or attention seeking. But I’ve had an overwhelming internal nudge to share my story a little more openly, so here I am...on a really hard day telling you guys about it. Not for sympathy, but in hopes that maybe someone else won’t feel so alone. . . . I am so very blessed to have an incredible support system. A Savior That never leaves my side, A husband that loves me and gets in the pit with me, family that loves me through the hard days, friends that reach out at just the right time, a therapist that is working so hard to help me learn to handle these days, a doctor that listens and helps me find a medication to help make it just a little easier....and the list goes on. It doesn’t make the bad days go away, but it helps them be just a little more bearable. . . . And on that note, as always, I’m here, friend. I’m in the pit too and even if you just need someone to know you’re struggling and be a listening ear, I’m here. You are not alone. WE are not alone. One of my favorite #spiralized meals- Sweet potato and chicken “pad thai” 🍠🥦🥜 . When I first got a #padernospiralizer I always tried to think about what other veggies I could spiralize other than zoodles (zucchini). I came across this recipe and made some tweaks and it has been a go to for us! It has great flavor, full of veggies and protein, and heats up great! Keep reading below for the recipe 😉 . Prep your veggies- slice 1 red pepper and 1/2 red onion into small slivers. Chop broccoli (1-2 heads) into small pieces. Spiralize 2 sweet potatoes (or 1 lb). I like to peel my potato first. Mince 2-3 cloves garlic. . Dice 2 chicken breasts into small cubes. 🐓 . Heat up wok or skillet. Add 1/2 tbsp of sesame oil. Add 1/2 of the minced garlic and 1/2 tsp of grated ginger or ginger paste and cook until fragrant. Add chicken. Season with S&P. Once cooked through, remove from wok and set aside. . Add another 1/2 tbsp of sesame oil, the rest of the garlic and another 1/2 tsp of ginger paste. Add in all your veggies. Stir until veggies are cooked and tender (5-10 mins). I had to add a little water until broccoli was cooked through. Add the chicken back to wok and stir. . I added 2 tbsp of my peanut sauce (posted previously) and topped with cilantro, green onion, 1 tbsp of peanuts, and of course, Sriracha 🌶 . This makes 4 servings for 9 #weightwatchers points each. Buffalo Cauliflower. I know. You’re thinking, “Ew- cauliflower?” I’m telling you though. This was DELICIOUS! Diet or no diet, this is going in my menu rotation. Soooo, my recipe: Cut a large head of cauliflower into bite size pieces. In a large ziploc bag mix 1/2 cup flour and 1/2 cup water (use whole wheat flour if you’re trying to be healthier) sprinkle in some garlic powder and pepper. Add the cauliflower into the batter mixture. Close the ziploc bag and shake to coat the cauliflower. Shake the cauliflower around in a colander if you have a ton of batter. You want the cauliflower coated, but you don’t want to pour a ton of the liquid in the air fryer, or they won’t get crispy. I cooked mine in the air fryer at 350 for about 15 minutes. Every 5 minutes I would shake the basket around to make sure it browned evenly. Empty the cauliflower into a bowl. Pour 1/4 to 1/2 cup of Frank’s Buffalo Sauce into bowl. Shake the bowl around to cover the cauliflower with sauce. Pour the now buffalo sauce covered cauliflower back into the air fryer and cook for 5 more minutes. Serve with some Greek yogurt Ranch (or regular ranch if you’re already skinny enough 😝) Y’all. I’m telling you I could have eaten the whole head of cauliflower myself, and I am not a cauliflower girl. MUST MAKE. Last night was my “cheat meal” that I allow myself to have once a week. We had a big family dinner at my favorite seafood restaurant. I had crab stuffed jalapeño’s, filet topped with crab and hollandaise sauce, mashed potatoes, and a brownie sundae to top it off. I also had a few craft beers. I tracked everything the best that I could (except the beer- I didn’t know how to track that?) so I am just counting those remaining 27 fit points as gone and I will not be touching my weeklies either. Egg Roll in a bowl with Peanut Sauce 🥡🥢🥜 . I love this recipe- it’s so easy, quick, and delicious! The peanut sauce really gives it something extra! Keep your eyes out for the peanut sauce recipe! This recipe is👇🏻 . First, remove sausage from casing and brown. When the sausage is done, add 1 tbsp of hoisin sauce. Stir for another few minutes. Remove and set aside. . Add 2 tsp of sesame oil to a pan. Add 1 tsp of grated ginger and 4-5 cloves of minced garlic. Add bag of shredded carrots and 3 tbsp of soy sauce. Sauté about 3 mins or until carrots become slightly soft. Add 5-6 cups cabbage (you can sub a bag of coleslaw mix but I had 1/2 head of cabbage left over from a previous recipe). Stir until cabbage has cooked down and is wilted. Add sausage back to pan and chopped green onions. Stir another 1 min. . This makes 4 servings at 4 #weightwatchers points each. Many people tell me they do not like veggies, I promise there are recipes that will help you crave them especially once you get rid of the processed foods from your life. Holy cauliflower Batman! This was bomb.com. Who knew there was so many ways to enjoy cauliflower, like truly enjoy! I showed how I made them and managed to enhale the whole bowl awhile ago on my insta story(May be in my air fryer hilights, I will check) but thought it would be worth posting so I have for later to make again. I made in #airfryer but you could make in oven, grill, or on stove Just will have a different texture. 1 bag organic cauliflower florets (I used @freshthyme ) 1-2 tbsp pesto (homemade or use a good one) S&P EVOO 1/4 cup Parmesan (just leave out if dairy free and I love using nutritional yeast too as a dairy free alternative) Organic pine nuts, toasted 🥜 Fresh basil (right from my garden) 🍃 Shook all together Until well coated and placed in preheated airfryer at 392 for 10 mins. Shook it up and put in for a couple more. Topped with organic toasted pine nuts from @thrivemkt (Let me know if you want my link to shop and save, I am working on a master list)Then placed in my mouth and devoured it all! So good, so easy! FRUSTRATION. 😑 Sometimes the scale doesn’t move the direction you intended, despite your effort. This is one of those weeks for me. Fortunately, I’ve been on this journey long enough to know that there are SO many factors that play into this....sodium, fiber, water intake, and the list goes on. Oh my goodness! This WW FRENCH ONION CHICKEN is amazing and total comfort food! For the side I had some @littlepotatoco yummy garlic potatoes! By far the best dinner I have had in a while. ***THIS WAS MY FIRST TIME MAKING THIS AND I DID NOT FOLLOW A PARTICULAR RECIPE*** ❣️4 Chicken Breast ❣️14.6 Oz Swanson Beef Broth, Reduced Sodium ❣️1 Yellow Onion ❣️2 Cups Great Value Fat Free Mozzarella Cheese ❣️1 Tsp Flour ❣️Spray Butter ❣️Pam ❣️1 Cup Heinz Homestyle Gravy, Bistro Au Jus ❣️1 TBSP Better Than Bouillon Beef Base ❣️The Little Potato Company Garlic Parsley ➡️➡️➡️➡️8 WW POINTS FOR ENTIRE PLATE◀️◀️◀️◀️ (2 WW POINTS PER CHICKEN BREAST) _____________________________ Preheat the oven to 400F. Spray Pam and Spray Butter in pan and chop onion (longer pieces) into pan to sauté. Once it gets going add the beef broth. Once gets to sautéed desire remove into bowl and add chicken to the same pan. Brown the chicken and add spices (salt, pepper, garlic powder, Italian blend). Once browned, remove onto plate. Add the onion back to heat and add tablespoon of broth and flour to thicken. Poor into baking pan and place chicken on top. Bake for about 25 minutes then add au jus gravy and bake another 5 minutes. It *might* be the ugliest fruit salad I’ve ever seen....but y’all...it tastes SO GOOD 😋 I’ve been itching to try some new recipes for snacks and/or breakfast and this one is first up! It’s a family friends recipe I adjusted to make a little more WW friendly. It came out to about 4 pts for a good sized serving (it makes a HUGE bowl that I’m guessing will be about 10 servings). Here’s what I put in it: . . . 1 Fuji Apple, 1 Golden Delicious Apple, two oranges, 1 grapefruit, black grapes, 1/2 carton strawberries, 2 kiwi, 1/2 c. Coconut flakes, 1/2 c. Chopped pecans, 1/4 c. Truvia Brown Sugar, & 1 c. Mini marshmallows. . . . Chop all your fruit up and add remaining ingredients! Stir and enjoy! You can add all kinds of fruits to this one! *Werbung-unbezahlt* Heute habe ich mal versucht, eines meiner liebsten türkischen Rezepte nachzukochen: Adana Kebap 😍 Inspiriert aus der #weightwatchersapp , aber ich musste improvisieren 😂 Ich habe 500g Rinderhack genommen und das ordentlich gewürzt mit Salz, Pfeffer, Chili, Koriander, Muskat und ein wenig Zimt. Zusätzlich kam noch ein Ei mit rein. Alles gut verkneten und ab auf den Kontaktgrill 😊 Als "Soße" gab es Bohnenmuß. Das Originalrezept verlangt weiße Bohnen. Hatten sie im Aldi nicht, also hab ich Kidneybohnen genommen. Eine Dose zusammen mit etwas Honig, 1TL Essig und einen Schluck Wasser püriert. Getting back into the swing of tracking this morning. I’ve already tracked my breakfast, morning snack, lunch and part of dinner. The hardest part of getting back into the swing? Snapping out of my munching mindset 😑 I let myself slide back into snack mode these past two months...which, for me, is where I lack control. I don’t know about y’all, but “easy like a Sunday morning” doesn’t exist in our family. We go to church with children 🤷🏼‍♀️😂🤣. My Sunday morning consists of- No, you can’t wear that... That does not fit you... Just because you are only wearing pink, does not mean it matches... Taking a shower 4 days ago does not qualify as “I just took a shower.” You can’t wear a flower spaghetti strap dress in the winter. No you can’t wear flip flops either. Is that slime in your hair? What is all over your face? I know you brushed your teeth, but when you don’t use toothpaste it doesn’t count........🤷🏼‍♀️ Needless to say the list goes on 😝. ****HOWEVER**** One thing that is important for a successful Sunday for me is a good breakfast 🍳 because church is long and I get hangry (shout out to 2 hour Sundays instead of 3 for all my LDS friends though 🙌🏻. Jesus heard our prayers 🤷🏼‍♀️😂). I am guaranteed to have to take my breakfast to go, but that doesn’t mean I have to grab something unhealthy or unfulfilling( like a granola bar. Thank you, next.✌🏻) *** This breakfast burrito was made in 5 minutes( 5 points on WW)**** It’s eggs, a slice of velveeta cheese, and salsa all scrambled together. While it was cooking I sliced an avocado 🥑 and then wrapped it all in a piece of Joseph’s flat bread. Well, Hello! 🙋🏼‍♀️ I’m back! Confession right out the gate: I fell off the wagon! I began a new job mid-October (Hallelujah!) which meant I couldn’t make my normal WW meeting time. Now, I *should* have just found a new meeting time and carried right along but I didn’t....and now here we are 2 months later! 😑 BUT that’s just a hurdle in the journey, right? . . . The hubs and I sat down today and talked about some realistic goals we each have for January and the new year. The biggest change I’m making this year? Wellness for ALL of me. Physical, Spiritual & Mental. I’ve focused on each of these at different points in my journey but never have I tried to make them work together. What’s that mean for me? . . . PHYSICAL: Re-engaging with my local WW team. They were an integral part of my first 35 lbs of weight loss. I need the accountability of weekly weigh-ins with my team and I miss the community. . . . SPIRITUAL: Jesus. First. He created me and knows my inner most being. He hears those prayers in my heart I haven’t dared utter out loud yet and He walks beside me on my hardest days. . . . MENTAL: Therapy. whoa now. Did I just say I’m going to see a therapist? YEP. Am I scared? Definitely. Will I go anyways? Absolutely. Mental Health is near and dear to my heart. I’ve lost a loved one who dealt with mental illness. I’ve seen friends struggle with it. I struggle with it daily. It’s important that I am actively working on bettering my mental health so that means stepping out of my comfort zone. . . . That’s where I’m starting this 2019....in an honest and hopeful place with myself. I’ll fail several times this year, I’m sure of it. But I WILL keep going. 💪🏻 Смотреть полностью
