For today’s version of #whatieatwednesday I’d like to tell you a tale called “Even Dietitians Experience Lunch Ruts: Salads in the Winter”. . . . Tbh I’m not feeling meal prepping, and having some upcoming travel just made me want to keep it even more low key this week. So, here we are with another desk salad. . . . Here’s the thing though-it’s really good. I’ve decided it’s the little mermaid salad because it has seaweed and salmon from a pouch and the colors of the red pepper and red onion remind me of Ariel 🧜🏿‍♀️. for you that don’t know I have struggled with stomach issues for years and in the beginning of the year I finally went and saw a doctor and found out I was allergic to gluten, wheat, grain, corn, rice, soy, dairy and the list goes on or pages if I should say🤷🏽‍♀️ ⁣ when I usually tell people that they laugh and go so what do you eat air? and honestly when i first found out I was so fustrated (maybe even pissed at times)but I had a choice to make moves or continue to suffer. ⁣ A year later I am finally becoming passionate about nutrition. It’s #WhatIEatWednesday ! What’s the best thing you ate yesterday?? As you all know, thanks to doing my #SixWeekShred for PROJECT COMEBACK, I’m in a bit of a cut right now. And so far its going great! 😄 I’m still feeling energetic and strong and I’m not feeling deprived. Here is everything I ate yesterday while in a deficit: . ☕️TEA: I started out my morning with some ginger tea. I chopped up a thumb of ginger, boiled it for a bit, added some manuka honey and that was it! . 🥞BREAKFAST: PANCAKESSSS 😍😍 yeah, you can eat pancakes and lose weight 💁🏼‍♀️ I used the @birchbenders mix, added an egg, and used a little less water than recommended and they came out nice and fluffy 😄 I also added some cacao powder and maca because I’m #extra . And I topped them with some chopped up chocolate covered freeze dried strawberries from @natierrasuperfoods 😋 . 🍵PREWORKOUT: I had a little @foursigmatic matcha latte as my preworkout of choice. To it, I added some cashew milk from @malkorganics , collagen, creatine, cinnamon, and nutmeg. For sweetness I added some monk fruit powder and a smaaaaall splash of maple syrup . 🥙DINNER: PASTAAAAA wow it almost felt like a cheat day! Pancakes and pasta??? So delicious! But they were nutritious too. I used the @eatbanza chickpea pasta with some pasta sauce, added some ground beef from @buyranchdirect , some carrots, celery, zucchini, onion, and mushrooms, and topped it with some avocado! Happy Wednesday everyone! Just shoved this in my face and now I’m ready to go crush my accounting exam today💯 Today is a “clean out the fridge” day. If ya know, ya know. The deetz: Pancakes: 1/4c @birchbenders pancake mix 3 T water 1 egg white 2 t pumpkin pie spice A few drops liquid stevia Mix all ingredients together (mixture will be slightly runny) and cook ya pancakes! Top with pumpkin spice cream cheese (2 T cream cheese+1 t pumpkin pie spice+1/2T maple syrup) and even more pumpkin spice because I have no chill. Eggs: sauté 2 mini bell peppers, 2 T chopped onion, and 3 sliced grape tomatoes until just beginning to soften. Pour in egg whites to cover the bottom of the pan, season with salt and pepper, and wait for the egg whites to set. WHAT I EAT Me. This is what I eat. I’m not telling you to eat this. But! There is no way around it, if losing weight it your primary goal then a calorie deficit is a must. To obtain a calorie deficit you need to have some knowledge about food, nutrients and calories. There’s a fine line between knowledge and obsession that must be tread carefully. With this in mind, I get asked a lot about what I eat so I thought I would share. This is what I have for breakfast most mornings - I am sharing with the below caveats: - I’m not trying to lose weight - I get up early so I need a breakfast that will keep me going - I don’t #MealPrep for health reasons, I do it purely to save money. I try to look for bars with nuts for protein and minimal sugar🥜🍯 For lunch between classes and usually post workout, I love to build my own meal at the cafeteria with plenty of veggies and cucumber-pineapple salad. I add some chicken and a fried egg or two for some protein🥒🍳🍗 For dinner today I found my favorite meal from a night market on campus, a pita bread filled with chicken and veggies in chili sauce🌶😍 • After some time, I’ve been able to find great options to eat a little healthier than fried rice, noodles, and chicken all day (even though I eat plenty😋)! This brekkie is so collage worthy! Ive been experimenting with coconut flour this week and I just can't believe i didn't include it in my diet years ago. Like I said, I messed it up the first time I used it and never went back...till now. Who doesn't love a bacon sandwich in the morning? Well, I thought I'd make my own mug bread again with coconut flour, but this time using some feta cheese and just egg whites. Once I took it out the microwave and let it stand, I then sliced it and and toasted in on the grill. Result? A Herby, feta cheesey, bacon sarnie! Obviously you can swap the feta for normal cheese but feta just gives it so much more flavour. I have seen these recipes done with both almond flour and coconut flour being used, so may try it again using both and see what that's like. Make sure you let it stand for a few minutes before eating as just like with cakes, you will get that egg taste of you don't let it stand. 🍂Pumpkin pie smoothie bowl🍂 I know I know something warmer better suits this weather, but at least it's not lacking in the comfortable and cozy department. This was my post recovery meal and it was a great one. I go crazy for this time of year because mostly all I can think about is PUMPKIN 🎃! So let's go over what was included in this bowl: Mixture: -1/4 cup of pumpkin purée -1 frozen banana -2 1/2 Tbs of dairy-free yogurt -1 Tbs of flaxseed/ chia seeds -pumpkin spice blend -scoop of protein powder (optional) -plant-based milk (enough to get the mixture blending) Toppings: -pumpkin spice granola (recipe a few posts back) -half banana -goji berries This was my post-workout meal so I included protein powder. I wanted to share with you what I eat most of the days (well not many variations during the week at work) because a lot of people thinks that I am following some kind of restrictive shake diet! . It’s not a shake diet! I have been in the diet trap before and wouldn’t get back there! I am a fan of eating your food but sometimes it is so much quicker and faster to make a shake! . Who can agree with me? We are all busy either moms, working professionals or just having a long day on the go! . And my shake it’s not only a powder and water. I normally have spinach, banana/berries, peanut butter powder, flaxseeds/acai powder, almond milk and water. It still gives me enough calories and nutrients to get me through my morning! . I eat carbs, even that I limit them due to my PCOS. I try to eliminate Gluten as it makes me so bloated and my PCOS worse! I do have some sweets 🍫 pizza 🍕 or a takeaway 🥡 .
