GO-TO MEALS | you know those meals that you always tend to gravitate towards? This is one of mine. Big bowls of veggies with some brown rice and your favorite sauce - 💥 bam 💥, perfect meal. ⁣⁣ ⁣⁣ Rice and veggie bowls are easily one of my favourite meals because they are SO versatile and so easy. This one was: brown rice, roasted chickpeas, sweet potatoes, red cabbage & broccoli, sautéed mixed greens, nooch roasted carrots topped with @minimalistbaker red curry sauce from her “rich red curry with roasted vegetables” recipe and a little salsa!⁣⁣ ⁣⁣ So 👏🏼 tasty 👏🏼 ⁣⁣ ⁣⁣ Pro tip: when making sauces like this I typically double the recipe and freeze half to have for quick meals later! 🙌There is so much health in this smoothie it's a no-brainer Tonic Tuesday #repost @missfitandnerdy 🙌 . 🥦SUPERFOOD SLUDGE (lol sorry I know it isn’t the most appealing name but I promise this tastes good!) . 🥙For today’s #WhatIEatWednesday , I’m bringing you this recipe for one of my most nutrient dense post-3-day-fast meals. After a prolonged fast it is important to consume lots of nutrients to give your body what it needs to start repairing and functioning optimally again. It looks kinda gross but I wanted to share this concoction because it is SO GOOD FOR YOU. So, here goes: . 🥗SUPER FOOD SLUDGE RECIPE . 🐂2 cups bone broth—I used @owlvenice beef bone broth. It is rich in minerals that support the immune system and contains gut healing compounds like collagen, glutamine, glycine and proline 🧀1 tbsp ghee—I used @goldnuggetghee. Tip: use ghee from cows that have been pasture raised. Ghee is dairy free, clarified butter, packed with vitamins A, D, E and K, as well as fatty acids CLA and butyric acid. 🥥1 tbsp coconut oil—I was going to use MCT oil but decided this would be better for the flavor. Studies have shown that MCTs can increase 24-hr energy expenditure in humans by as much as 5% 🥕.5 thumb of turmeric (or to taste)—Turmeric has powerful anti-inflammatory effects. It is now believed that chronic, low-level inflammation plays a major role in almost every chronic, Western disease. ☘.5 thumb of ginger (or to taste)—Ginger is a powerful digestive aid, which is great after a fast as you reintroduce food 🍋Juice from half a lemon—Use a real lemon, not store bought lemon juice as it is most likely pasteurized which gets rid of most of the benefits. Outside of work, I coach gymnastics a few days a week. On the evenings that I coach, I leave straight from work and then don’t get home until around 8pm. Since I don’t typically eat lunch, I like to pack food to bring for dinner that I can eat on the way to the gymnastics gym. All of these foods are easy to eat in the car, so it’s what I pack almost every single week. I used to just bring whatever I meal prepped for dinner for the week, but that was almost always too messy and difficult. Instead, I pack two of these on Sunday and stick them in the fridge at work until I need them on Wednesday and Thursday. I never get tired of this combo, and it’s always something I look forward to. It’s also great because it’s pretty compact. What’s pictured is about 1,000 calories. That’s about how much I eat at every meal, and I love that it all fits easily into a lunchbox. :) This week I had 3 hard boiled eggs, salami and cheese plus @califlourfoods cauliflower thins (I’m obsessed with these right now). Sometimes I’ll mix up the meal and do cream cheese instead of sliced cheese. It really just depends on what I’m in the mood for and what’s in my fridge that week. For a snack at work I always have some @eatpilinuts . If I’m not hungry during the day, then I’ll save this for my dinner. For some extra fat and a bit of sweetness, I like having an @perfectketo keto bar. I think the salted caramel is my favorite flavor! It was a tiny bit melted today in the car and it was soooo good. Breakfast: 7:30am. I knew I would it would be 7 hours until I would be able to have lunch as I had a lot of meetings this morning so I wanted something that would keep me going for a while. I could have just had 2 pancakes and it would have made my calories a bit easier today but there was only 3 left so I finished them. . Lunch: 3pm. Leftover dinner from last night, spring chicken with potatoes, asparagus, fennel, tomatoes and wild garlic. . Dinner: 7:30pm It was supposed to be roasted beetroot and halloumi but I really didn’t want to do the prep work as I’ve had a long day at work, concentration heavy. I just wanted something I could bung in the oven and then I realised that the ‘best before’ date on the gammon steaks was yesterday 😱. So quick re-think and I went for the quickest combination of foods. . . Treat: After the dishes are done! 2 squares of Lindt ‘Mint Intense’ dark chocolate. I have 1 or 2 squares of this every day. . . 57 calories left over! I usually end the day with around 100 or so calories, it’s a bit less today as the spring chicken was pretty high up there. My current allowance is roughly what the average maintenance calories of a normal person are, but because I am so overweight I can currently lose weight on that amount. If I need them I will eat them but equally if I feel I am good for the day then I don’t worry about them too much. I know I’ve eaten really well so I don’t feel like I need to consume them. . . I didn’t eat the dog, but couldn’t resist this photo! Inspired by the lovely @samozkural to start incorporating bulletproof coffee into my new morning intermittent fasting regime! (Would it be much healthier and better for you to make homemade bulletproof coffee? Yes! but I’m a busy women and am low key lazy In the mornings before heading to work soooo I opted for the easy way out #sorrysis #noshame ) 🤷🏽‍♀️ So here is the scoop so far on this guy. I am a big breakfast advocate, I love eating in the morning to feel rejuvenated and ready for the day. But one of my goals this month was to push myself out of my comfort zone, which also includes my minds comfort zone. I love creating a schedule and sticking to it, but I find that sometimes I eat just because it’s the “time” to and not so much that I am actually hungry. So I wanted to challenge myself and see what would happen to my body if I challenged my mind to a different eating pattern. Granted I have only done it for two days, BUT I will say that my energy levels are the same, I don’t feel as reliant on food in the mornings, and I feel very satiated even though I’m not “eating” right away. 🤯 I still have so much to learn, and there are going to be days when this type of schedule doesn’t work for me, but if you would like updates on this new intermittent fasting journey let me know! 💛 Happy Wednesday warriors, go slay the day!! 🤩 Смотреть полностью

What I ate on my Birthday 🎁 . . Some of you have been wondering what I’m eating now so here’s a good visual. It’s taking a lot of willpower to get through this thing. I have yet to clear up from my cooked foods flare up over 2 wks ago and just when I finally was- the stupid lower circulation herb I took had to have cayenne in it. 🤦🏽‍♀️ Super bad trigger for me! That explained the burn going down my throat. So now I’m back in another flare. I’m telling you, cooked food makes flares last wayyyy longer. I’m kicking and screaming right now because I haven’t had a flare of this capacity in over a year and no way was it this bad because I was solely eating raw foods and it was gone in a matter of two days. My face actually feels like I have rosacea now. I’ve forgotten what it’s like to have rosacea being raw. Not that I mind but I’m sorta forced to eat cooked right now because all the fruits I’m allowed to eat are so low in calories. It’s literally annoying me. I’m having to eat more throughout the day instead of 3 meals and I still can’t get in the calories without adding in some fats and cooked food. Ofcourse chronometer isn’t exact science but it sure gives me an idea of where I’m at. Since I’ve gained all my pre-vegan weight back and want to sustain it, I must eat alittle over 2k calories a day. Add in work outs each day then the calorie counts go up. Normally I burn almost 400 calories running 5 miles each day so I always try to strive for 2500. My salad was half of a huge heavy iceberg lettuce, 2 radish, 2 small celery stalks, half of English cuke, 3 cloves garlic, half cup radicchio, half cup of kale, 2 tbsp tahini and a half tbsp of sunflower seeds. I eat 3 huge sweet potatoes with my huge salad so every night I end up with a food baby 👶🏽 now. Day isn’t over yet but so far I drank 56oz of water and expect to atleast get in another 24oz before bed. Day 4 elimination diet done ✅ Смотреть полностью

#whatieatwednesday - I’ll be honest. It was my intention to post everything I ate today! That’s my plan every Wednesday from now on to post everything I eat for the day! But today I had to work and my office doesn’t allow me to take the best pictures! And I had a boring sandwich haha. • • So today it’s dinner! I had salad with avocado, tomato and red onion, sweet potato wedges and roasted chicken wings! All in all about 643 calories, most of which are in the chicken skin (the best bit!). • • The awesome thing about this is that I bought 12 chicken wings for less than £2 from @aldiuk and I have plenty left over for lunch tomorrow! • • Let’s hope next Wednesday is slightly more interesting and a whole day of food! Such a contrast to the last couple of weeks. Yesterday was a super busy and long work day and on top of that, I don’t have a lot of food in the house as haven’t been food shopping this week (going later today) as have been really busy. Frozen veggies to the rescue! 😅 Here’s s breakdown of my day (food wise). Breakfast - Coffee around 6-6:30am while travelling to work. Then a banana, strawberries and almond milk smoothie around 8-8:30am while setting up at work. (I sometimes add spinach too but didn’t have any left). . Snack - Cocoa & Raisin protein bar 11am (I don’t always have time for a mid morning snack as each workshop is different but luckily I did today!). . Lunch - Tuna and sweetcorn sandwich 2pm (This is my go to sandwich whenever I haven’t been able to meal prep my lunch in advance) . Snack - Mandarin 4:30pm . Dinner - Katsu chicken with rice, peas and broccoli. . #WhatIEatWednesday Happy happy hump day! Hope you all had a good day-whatever that means for you! I needed to be super productive today between errands to run, school assignments, chores, work, and working out so I neeeded a lunch that was healthy but also super quick and these toasts & smoothies delivered 🙌🏼 🥑 w/ 🍅 & 🍋 on @scharglutenfree multigrain bread + @maranathanutbutters coconut almond butter topped with cinnamon, chia, hemp and flax seeds. Soooo good and a great sweet & savory pairing! I paired it with this delicious kiwi & strawberry smoothie with fresh strawberries, fresh kiwi and frozen pineapple. Definitely gonna be making that a lot more 🥰 Don’t forget eating healthy doesn’t have to be time consuming!! All of my meals today took under 10 minutes to prepare. Another #whatieatwednesday from one of our talented final year Nutritional Therapy students. We can’t wait to try this to perk up our Wednesday! Posted @withrepost@keepcalmnutrition_nt A cheeky CAULIFLOWER AND CHICKPEA CURRY in less than 20 minutes for your Friday or Saturday night... yes please! This curry is so easy to prepare, has no nasties and is packed with protein, healthy fat and fibre. Budget friendly too. You will need: 1 tbsp of olive oil, 1 onion, 2 garlic cloves, 1 cauliflower head, 1 tin of chickpeas, 2 tins of full fat coconut milk, 2 tsp of medium curry powder, 3 large handful of spinach leaves, optional fresh red chili or chili flakes to serve. 1. Cut your onion and garlic finely. 2. Divide your cauliflower head into florets. 3. In a pan, cook the onion, garlic and cauliflower in olive oil for 10 mins. 4. Stir in the curry powder and cook for an additional minute or so. 4. Strain and rinse your chickpeas and add to the pan. Mix with the spices and cauliflower. 5. Add the coconut milk, bring to the boil and simmer for 15 minutes. 6. Stir in the spinach leaves just before serving until they start to wilt. 7. Optional: add fresh chili before serving for an extra kick. This is a complete meal that can be eaten on its own but it could also be served with some brown rice and coriander leaves. Freeze the leftovers if you have any! Feeling so tired lately. Emotionally drained. Sleeping at night isn't so good. Just all over the place. I haven't been fully eating the things i should, i haven't even been feeling hunger even as surprised as that is for an overeater. Having a few snacks and couple meals but just havent felt like I have wanted to eat.. Only a couple times this week have I felt super hungry. Yes I am stilling eating just not the healthiest completely. Only thing I have been able to really want & what my body wants to have is my shake. So I’ve been posting what I eat on Wednesdays #whatieatwednesday as thought it would be interesting for me to see (and maybe for others too) as we’re all different and I don’t know about you but I find it really interesting to see what other people eat in their day (maybe I’m just nosy ha). My Wednesdays are all different as sometimes I’m home (day off) so I have more time to cook and prepare meals but others I’m working so all my meals and snacks except for dinner are eaten on the go. This pic is of everything I ate last Wednesday which was a day off at home. I’ve included literally everything I consumed that day (except for water which I normally drink about 1.5litres at home - need to drink more at home! And about 2.5-3litres on a work day - I do a lot of talking and running around!) I post it all on my stories throughout the day but I’m also going to try and post these after every Wednesday on my grid so I can see the difference for every time. I’m going to be completely honest with these and post everything I eat in that day whether I eat good nutritious food like in this pic or complete rubbish which sometimes happens too of course! You don’t have to like what I eat and am not interested in judgy comments so please keep those to yourself, but if you do have positive thoughts or opinions to share I’m happy to hear them as am always open to learning and exchanging ideas, thanks! 😊✌🏼 . . What I eat Wednesday, mom edition! . I should add a disclaimer that this is not a typical breakfast for me! I wish there was time to make a big brekkie like this everyday but we are usually running around crazy and my breakfast is a little less glamorous. Today, I have kiddos home sick, recovering from a stomach bug. 😷 While everyone was content and plopped on the couch watching tv, I had a chance to whip this up. . Sautéed mushrooms, onions, and spinach topped with red pepper flakes and feta, a crispy fried egg, Japanese sweet potato toast, and some leftover sumo orange slices. Chai tea topped with cinnamon on the side. . Fingers crossed 🤞 this bug leaves our house today (everyone seems to be on the mend) so we can get back to normal. 🍴What we eat Wednesday, 5 year old edition 🍴 Last week I shared a day of eating for my 3 year old, here’s a peek at what my 5 year old had for food options today. Ms. 5 is working on finding veggies she likes so her meals are a good example of how we try to get veggie exposure in different ways. . Breakfast: high protein pumpkin pancakes with added carrot-we seriously make these all the time so you’re probably sick of seeing me post about them! She ate all of them. . After breakfast treat: a donut she got at a bake sale at school, made at our local country store. She split it with her brother. . School snack: veggie chips, @organicvalley grass milk kids yogurt tube, orange segments, and @perfectlyfreetreats fruit bites. She ate the yogurt, half the chips, a few bites of orange and no fruit bites (she prefers a different flavor and her brother ate all these when she came home). . Lunch: peanut butter and banana sushi in a whole wheat wrap, assorted rainbow fruit, cheese and pepperoni stix, @simplemills cheddar crackers, purple carrot coins. She ate all the wrap, half the fruit, one bite of cracker, all the pepperoni and cheese, no carrot (although she ate one coin later in the day because she thought it was chocolate!) . After school snack: leprechaun smoothie made with banana, frozen cauliflower, spinach, orange, plain kefir, almond milk. She drank it all! . Dinner: tacos with carnitas, spaghetti squash, cheese, lettuce, sour cream, guac. She had 3 tacos (only one with spaghetti squash, although she did try some plain and said it wasn’t bad).
