Made 4pt chicken tacos for 2 for lunch today! I made my shredded chicken by putting 5 frozen breasts in my Instant Pot (10min, poultry setting, 1/2 cup chicken stock, garlic and fresh herbs). After this lunch, I have enough chicken for 2 more meals! My man ate 5 tortillas worth (he loves big portions and burns them off immediately) while I was satisfied after just two. Success!
